Happy Meatless Monday! Can you believe that it’s halfway through August?! That means that fall is fast approaching and summer will be coming to a close soon.  While I am all for everything pumpkin, apples and spiced, there’s still a few weeks left to enjoy the fresh produce that’s still in season now!

So, in the spirit of late summer and Meatless Monday, I am sharing 20 healthy (and totally meatless) recipes you can make with late summer produce.
