3 Gluten Free Recipes for Fast Recovery
Yesterday I finished the Syracuse Half Marathon for the third time.
The first year I more or less nailed it just 26 seconds shy of my goal time of 1:45. Last year, I nearly died whilst trying to run in the most epic race blizzard ever and was just happy to come out of it alive. This year the weather was mostly up in the air until race morning but I had declared redemption and wanted to chase my PR come hell or high water. I mean, it couldn’t be any worse than last year so I was willing to give it whatever I had.
Needless to say, a variety of factors including a SUPER early wake up call, screw in my car tire and getting stuck in the wrong pace corral all added up to missing my PR.
I honestly tried my hardest to make up my lost time in the first few miles but it wasn’t in the cards for me. I am OK with that – I still ran, I still pushed myself up each hill, I still crossed the finish line and I still treated myself post race and am taking the time to recover today.
Speaking of, I decided to share some of my favorite post-race gluten free recipes that will help you (and me) recover faster.
No bake, quick to make, easy to take on the go and packed with 50% more potassium than a banana (because they’re made with delicious Medjool dates)…what more could you ask for from a recovery snack?
Made with the recovery magic of black cherries, plant protein and a boost of turmeric, this super easy parfait can be whipped up over night and is ready to grab and go! Talk about fast fuel 😉
Who can say no to only four ingredients, one of which is chocolate for recovery?! Not me. Delicious enough for dessert but perfect to refuel with after a hard run or workout!
