5 Gluten Free Avocado Recipes for Cinco de Mayo
If you’ve hung around my blog long enough you probably know that I am a little obsessed with avocado. I practically eat it every day and am always finding new ways to enjoy it so it should come as no surprise that when I went to roundup five recipes for Cinco de Mayo they all had avocado in them! 😉
They are also all vegetarian or vegan but of course, you can add your favorite protein to the mix and make it even more amazing!
This hot and spicy dish is the perfect way to celebrate without having to put much effort into making it. Simply just throw it all in a crock pot and a few hours later slice up some cool, fresh avocado and it’s ready for dinner or even a festive get together!

This is by far one of my favorite ways to use avocado in the summer. Tossed with corns, black beans, tomatoes, cilantro and a squeeze of fresh lime juice…mmmm so good! I especially love it with some chili rubbed and grilled shrimp, fish or chicken!
Southwestern flavors, avocado and sweet potatoes were made for each other. Perfect for lunch, dinner or anytime in between!
Two words: AVOCADO. FRIES. Need I say more?! May seem strange but try them, you’ll thank me later.
