5 Quick and Healthy Recipes for Busy Runners


Runners are usually a busy bunch.  Not only do we need to find time to take care of the house, shuttle the kids to an from school and somehow fit in time to pound the pavement, we also have to find the time to feed the family and maybe if we are lucky – ourselves. 

We all know that fueling is important but we often settle for whatever is quick, easy and convenient….which doesn’t always mean it’s tasty….and tasty is usually equated to taking time. 

Fortunately, with a little planning (just like you would with your training schedule), it doesn’t have to be a big production.  In fact, breakfast can be a breeze AND tasty at the same time….not to mention you get the nutrients you need to refuel from your run properly so you can perform your best.  

5 Quick & Healthy Breakfast Recipes for Busy Runners

 

Below are my five favorite recipes that are not only quick to make but also healthy and of course, allergy friendly.

Naturally Sweetened Mocha Granola

This gluten free granola is naturally sweetened with Medjool dates which have 50% MORE potassium than a banana.  Make it ahead of time and pour yourself a bowl in the morning to refuel after your run. 

Pine Nut & Kale Pesto Green Eggs

Craving Green Eggs? Try this dairy free and gluten free Kale & Pine Nut Pesto Eggs! Festive and healthy- dye free and easy to make!

Add a little excitement to your eggs with some kale and pine nut pesto.  Looks fancy and tastes even fancier but it’s actually quick and easy. Just prepare the pesto on the weekend, drizzle it on your Monday morning eggs and you’re good to go! 

Chocolate Espresso Chia Protein Pudding

Dark Chocolate and Espresso Chia Protein Pudding {Vega, Gluten Free, Dairy Free,}. The perfect plant-based way to refuel after a hard workout or run!

Chocolate + Espresso.  Need I say more? Just like overnight oats, you can make this pudding head of time, store it in a mason jar and grab it to refuel on the go.  Easy peasy.
