I don’t know about you but my spice cabinet has become like the junk drawer of my cupboards.  I honestly can’t remember the last time I cleaned it out and over the years it has gathered spice jar after spice jar- most of which have probably expired and lost any flavor they once had.

This past month I was sent spices inspired by the Andes and Peru along with recipe cards to create a menu for Peruvian Roasted Chicken, Aji Amarillo Sweet Potatoes and Pink Peppercorn Voladores.

Peruvian Spice Rub

A blend of paprika, ancho chiles, cumin, ground black pepper and Mexican Oregano.  Pairs well with sausages, chicken, shrimp, tofu or eggplant.

Pink Peppercorn Blend

Blend of  pink Himalayan sea salt and pink peppercorns.  Pairs well with sweet dishes like ice cream, melons or chocolate and savory dishes like scallops, shrimp or salmon. 

Aji Amarillo Spices

Blend of aji amarillo, coriander, basil, mustard seed, cumin and black pepper.  Pair well with potatoes and rice. 

As soon as I read the suggestion of making sweet potatoes with the aji amarillo spices, my mouth started to water.  I wasted no time whipping up these wedges that were a match made in heaven with the blend of aji amarillo chiles.

These literally are as mouthwatering as they look.  The flavors from the chile adds not only spice but also a hint of fruitiness that brings out the sweet in sweet potatoes.

Recipe

Ingredients:

  • 3 sweet potatoes, scrubbed and cut into wedges
  • 2 tbsp coconut oil, melted
  • 1 packet of RawSpiceBar Aji Amarillo Spices

Directions:

  1. Preheat oven to 400 degrees.
  2. In a large bowl, toss sweet potatoes with coconut oil and spices making sure to coat evenly. 
  3. Line sweet potatoes on baking sheet and bake 25-30 minutes, turning occasionally. 
  4. Remove and enjoy! 

 

Simple, easy and delicious! I really enjoyed being able to create something that tasted so unique with just the addition of some fresh Peruvian inspired spices!
