Apple Cinnamon Protein Oat Bars

Earlier in the week, I received a nice surprise in the mail from my friends at Quaker Oats.   Along with a thoughtful note wishing me a Happy Mother’s Day they also sent a pretty mason jar full of oats! 


 Naturally I had to bake something really yummy with these oats and Apple Cinnamon Protein Oat Bars came to mind! While I know apples and cinnamon are more reminiscent of Fall, I was really craving the combination plus I love how it makes my house smell :)

  1. -1 1/2 cups oats
  2. -3/4 cup almond milk
  3. -1 flax egg
  4. -1/3 unsweetened applesauce
  5. -1/2 cup almond butter
  6. -1/2 scoop vanilla protein powder (I used Plant Fusion)
  7. -1 apple, peeled & diced + (few slices from additional apple to garnish)
  8. -1 tsp baking soda
  1. Preheat oven to 350 degrees.
  2. Mix all of the ingredients together in a large bowl.
  3. To make the flax egg, mix 1 tbsp of ground flax with 3 tbsp of water and let sit until it becomes a yolk-like consistency.
  4. Pour into an 8x8 baking pan.
  5. Top with thin apple slices.
  6. Bake for approximately 30 minutes.
  7. Let cool & enjoy!
  1. You can add the additional 1/2 scoop of protein powder if the mix seems too wet or you desire additional sweetness/protein.
