Beeting Heart Smoothie Bowl {Dairy Free}


Do you ever have something end up not going the way you planned but it ends up being for the better? 

That’s exactly what happened to me with this recipe.  I thought I had this fabulous idea to make marshmallow-free rice krispies except they were colored bright red with beet powder and cut into heart shapes and were all sorts of cute and festive for Valentine’s Day. 

That clearly didn’t happen. 

And to be honest, I am not even a fan of Valentine’s Day.  Romance and hearts aren’t exactly my jam BUT I do like to make festive recipes.  SO when I got it in my head that I was going to make festive BEET RED rice krispie treats, that’s what I planned to do. 

I went to the store, got the goodies I needed including little heart shaped cookie cutters and proceeded to attempt the cutest, most-festive/healthiest rice krispie treats of all time.  

I bet you can guess what happened.  I was left with a bowl of crumbling krispies and a mess of a kitchen. 

Thankfully, I am accustomed to kitchen failures so I did what any foodie blogger would do…I improvised and made a smoothie instead.

Lo and behold, this “Beeting Heart Smoothie Bowl”.  Seriously, I sat in my kitchen for a good 10 minutes and thought REAL hard how I could use beet powder in an entirely different recipe and still make it “festive”. 

I already recently shared a “Beet Yesterday Smoothie” and while I wasn’t going to go that route, the more I thought about it, the more I realized I could make one kick-butt smoothie bowl with ingredients I already had on hand.

SO I rummaged through my freezer to find frozen raspberries and strawberries, grabbed my tub of PlantFusion protein powder and decided to still put my heart shaped cookie cutters to good use. 

With a little bit of patience and all of my creative abilities (which are mostly lacking), I somehow pulled off this layered smoothie bowl.

Beeting Heart Smoothie Bowl {Dairy Free}


RECIPE 

Ingredients: 

  • 1 cup unsweetened vanilla almond milk (or non-dairy milk)
  • 1.5 cups mixed frozen raspberries and strawberries 
  • 1 scoop PlantFusion Vanilla Bean protein powder 
  • 3/4 cup So Delicious CocoWhip
  • 1 scoop beet powder, divided (I used Healthy Skoop)
  • *varying sizes of heart cookie cutters
  • Goji berries and shredded coconut for garnish

Directions: 

  1. Blend together milk, raspberries, strawberries and protein powder. 
  2. Pour into small-medium size bowl and place in the freezer.
  3. In a separate small bowl, whip together CocoWhip and 1/3 scoop of the beet powder creating a light pink color. Remove smoothie bowl from freezer and place large heart cookie cutter in the center and fill with whipped mixture then place back in freezer. 
  4. Add another 1/3 of beet powder to remaining CocoWhip and whisk together until darker pink color is created. Remove smoothie bowl from freezer and place next size down cookie cutter inside and fill with whipped mixture then place back in freezer. 
  5. Add he remaining powder to CocoWhip and whisk together until a very dark pink color is created.  Remove smoothie bowl from freezer and place next size down cookie cutter inside and fill with whipped mixture.  Place back in freezer to set for another 5 minutes. 
  6. Remove and top with with shredded coconut and strategically placed goji berries. 
  7. Serve and enjoy!
