Blueberry Lemon Chia Seed Muffins
So it has been a while since I have shared a baking recipe and to be honest I’ve been dying to post this for quite some time but I kept putting it off because I wanted to wait until my blog was new and improved. Right now the site still needs improvement but I just added this new save/print recipe feature and I really want to post a recipe with it!
When I created this blueberry-lemon chia seed protein mini muffin recipe (that’s a mouthful), I had been craving lemon muffins and I don’t even like citrus. Maybe it was because the dreary cold weather was getting to me and the combo of lemons & blueberries has a fresh summer-like taste to it that reminds me of sunshine and warmth. They are perfect to eat for breakfast or for a quick snack in the afternoon. They also freeze really well and are just the right size for on-the-go! Here is the recipe, presented all fancy like on my new recipe card feature…enjoy!
- 1 1/2 cups oat flour
- 1 scoop vanilla protein powder (I used Plant Fusion)
- 2 tsp baking soda
- 4 flax eggs
- 1 cup almond milk
- 1/4 cup chia seeds
- 2 lemons zested and juiced
- 1 cup fresh blueberries
- Preheat oven to 350 degrees
- Mix wet and dry separately (you can make your own oat flour by putting whole rolled or quick oats in a blender). Also when making the flax eggs, mix separately and let sit before adding to the wet ingredients. Fold in chia seeds and blueberries, pour into greased muffin tin and bake for about 12 minutes.
- Let cool & enjoy!
