Blueberry Lemon Chia Seed Muffins


So it has been a while since I have shared a baking recipe and to be honest I’ve been dying to post this for quite some time but I kept putting it off because I wanted to wait until my blog was new and improved.  Right now the site still needs improvement but I just added this new save/print recipe feature and I really want to post a recipe with it!

When I created this blueberry-lemon chia seed protein mini muffin recipe (that’s a mouthful), I had been craving lemon muffins and I don’t even like citrus. Maybe it was because the dreary cold weather was getting to me and the combo of lemons & blueberries has a fresh summer-like taste to it that reminds me of sunshine and warmth. They are perfect to eat for breakfast or for a quick snack in the afternoon. They also freeze really well and are just the right size for on-the-go! Here is the recipe, presented all fancy like on my new recipe card feature…enjoy!

Blueberry Lemon Chia Seed Muffins

Ingredients
  1. 1 1/2 cups oat flour
  2. 1 scoop vanilla protein powder (I used Plant Fusion)
  3. 2 tsp baking soda
  4. 4 flax eggs
  5. 1 cup almond milk
  6. 1/4 cup chia seeds
  7. 2 lemons zested and juiced
  8. 1 cup fresh blueberries
