Blueberry Mint Hydration Popsicles


So here’s the deal, friends…

This past week I suffered from a REALLY bad go with the stomach bug.  It hit me early in the week HARD and was pretty relentless for the last few days up.  I won’t go into details but it left me pretty dehydrated and seriously craving something cold, refreshing and preferably packed with electrolytes.  

Since I was sick and couldn’t manage to actually make myself anything, I had to settle for a regular, old school ice pop and while it did the trick, it left me pretty disappointed.  What I would have preferred was one of my Nuun-sicles that I whipped up to reward myself after super sweaty summer long runs.  

Who is excited that it’s almost the weekend?! ME! ME! ME! I don’t know about you but this week has been a bit stressful and I have to say that I am really looking forward to my long run this weekend.  

I originally posted this recipe in August but it’s worth sharing again now despite the fact that it’s going to be 15 degrees this weekend.

You all know that my obsession with blueberries is real.  I can’t stop eating them.  In the last few weeks I’ve made GF French Toast Sticks with Blueberry Sauce, GF Blueberry Zucchini Waffles and Watermelon, Cucumber and Blueberry Goat Cheese Bites.  

Today, I am sharing with you these Blueberry Mint Hydration Popsicles…the absolute perfect way to rehydrate after a hard run or hot workout during the summer.

As I was sipping on my Nuun while finishing my long run, I had a stroke of genius to make my Nuun water into popsicles and there was no turning back.

For those of you who aren’t familiar with Nunn Hydration- they’re electrolyte tablets that are completely gluten, dairy and soy free.  These portable tablets are packed with active ingredients like sodium, potassium and magnesium to keep you hydrated and alleviate muscle cramps.  It’s like a portable sports drink…and now a popsicle.

Of course you could make the popsicles out of just the Nuun alone but I wanted to add a little something else to make it EXTRA refreshing.  

Since I used the Tri Berry flavor, I chose to add blueberries (obviously) but you could add blackberries too.  The refreshing part comes from the *mint.  

*Or if you have the bug you should totes use ginger 😉

Believe it or not, you don’t need to dice or shred or do anything to the mint leaves, I simply just picked them off the stem and threw them into each little popsicle mold along with frozen blueberries and the Nuun water.  Then you simply just let them freeze overnight and viola! – you have yourself a tasty AND rehydrating post-run treat!

BLUEBERRY MINT HYDRATION POPSICLES


RECIPE

Makes 6 popsicles

Ingredients: 

  • 2 Tri Berry Nuun tabs
  • 16 oz filtered water 
  • 1 cup frozen blueberries 
  • fresh mint

 

Directions: 

  1. Dissolve 2 tabs of Tri Berry Nuun in a large glass or bottle along with 16 oz of filtered water. 
  2. Pour Nuun into popsicle molds about 2/3rds of the way up then add 6-8 frozen blueberries and 1-2 fresh mint leaves.  Top off with more Nuun if need be. 
  3. Repeat to fill all 6 popsicle molds. 
  4. Place in the freezer overnight. 
  5. Remove the next day after a hot, long run and enjoy! :)

Notes:  You may have extra Nuun leftover- either store in fridge for later or enjoy on the spot!
