Caramel Coffee Dairy Free Popsicles {vegan, gluten free}


Summer is officially here which means long days and hot runs have also arrived. Generally, I try and beat the heat by heading out early but I find no matter how early I head out, I end up parched and desperate for something cool and refreshing.

Given that I start before the crack of dawn, I also end up finishing my runs right around normal people’s waking times which leaves me craving ALL the breakfast foods and of course, coffee.  The problem with that is after a super hot and sweaty run, I don’t really want hot coffee, I want the nearest thing that is quick, cold and will satisfy my hunger.

Enter, Caramel Coffee Popsicles.  I know, they sound terrible for you and not all that nutritious but these are different.   These popsicles right here are made with one of the best post-workout foods you can find – Bard Valley Natural Delights Medjool Dates!

Medjool Dates are chock-full of potassium (50% MORE than bananas) which is awesome for post-workout/run muscle recovery and they also happen to be high in fiber (helps absorb the natural sugars) and low on the glycemic index (meaning no mid-morning sugar crashes).  

They’re also naturally sweet and once pureed make the most PERFECT tasting caramel substitute you’ll ever try.  I only discovered this a little while ago when making my Naturally Sweetened Mocha Granola.  While naturally sweetened granola is always a good way to refuel post-run, during the hot summer months refueling with Caramel Coffee Popsicles is even better.

They’re sweet, they’re refreshingly cold and they’re a great way to refuel and restore your body with what it requires while you relax after a hot run.

All you need is a popsicle mold, dairy free milk, a cup of coffee and this frozen healthified fuel will be your favorite new way to cool down! 😉

Caramel Coffee Popsicles {VEGAN}


 

RECIPE

Ingredients:

  • 6 Pitted Medjool Dates, pureed
  • 2 tbsp coffee grounds
  • 1 cup fresh brewed coffee
  • 1 tsp coffee extract
  • 1 cup dairy free milk

Directions:

  1. Pulse Medjool dates along in a food processor along with hot water (start with ¼ cup).  Add water in small increments until a creamy paste forms.
  2. Distribute into popsicle molds evenly along with sprinkles of coffee grounds.
  3. Blend coffee, coffee and dairy free milk together then fill each popsicle molds to the top.
  4. Sprinkle extra coffee grounds on base of popsicle if desired.
  5. Freeze until solid.
