Chocolate Chip Cookie Cups {Grain Free, Dairy Free}

I’m not exactly sure what it is about this time of year but for whatever reason I become inspired to try new things.  It could be the joyful spirit in the air, the cheerful greetings or the fact that nearly every post that comes across my Facebook feed involves either booze or cookies. 

While I am not exactly a huge fan of the latter (traditional cookies that is), I do enjoy the challenge of taking a sugar and gluten laden cookie and making it “healthier” and easier for my sensitive belly to digest.  

Of course when it comes to holiday “cheer” AKA booze, I am always game….in moderation, obviously. 

Anyway, what I am getting at is that I recently saw a post that made chocolate chip cookie shots with baileys and I was all like “OH EM GEE, I NEED to figure out HOW to make these GF and DF so they can get in my belly ASAP”.  

So I did.

To be honest, converting them from the traditional cookie to a grain free, dairy free and vegan friendly version really wasn’t all that hard.  The challenge came in perfecting the “cup” part of the cookie. 

In retrospect, I should have used a little less cookie dough in each tin and made depth of the cup a little deeper so I could fit more of my Frangelico/almond milk mix (which is what I subbed for Bailey’s). 

Still, I think my GF/DF cookies and milk version came out pretty legit and totally worth whipping up for your next holiday party, cookie exchange or for Santa on Christmas Eve 😉

Who says milk and cookies are just for Santa? Add some cheer to the holiday season with these grain free and dairy free Chocolate Chip Cookie Cups!






  • 1 + 6 tbsp almond flour 
  • 1.5 tbsp coconut flour 
  • pinch of sea salt 
  • 1/2 tsp baking soda 
  • 6 tbsp vegan vanilla protein powder (I used PlantFusion)
  • 2 tbsp coconut oil, melted and cooled 
  • 1 egg, beaten OR 1 flax egg if vegan
  • 1 tsp vanilla extract
  • 1/3 cup dairy free chocolate chips + 1/4 cup for melting (I used Enjoy Life)
  • Frangelico liqueur 
  • Unsweetened vanilla almond milk


  1. Preheat oven to 325 degrees.
  2. In a large bowl mix together almond flour, coconut flour, salt, baking sod and vanilla protein powder. 
  3. In a separate bowl mix coconut oil, egg/flax egg and extract then combine with dry ingredients then fold in chocolate chips. 
  4. Place tablespoon size amount into mini muffin pan and then create “cup” by pressing down into the center with the bottom of a shot glass. 
  5. Place in the oven and bake for approximately 10 minutes. 
  6. While baking, melt 1/4 cup of dairy free chocolate chips with a splash of almond milk in 15 second intervals until completely melted. 
  7. Remove cookies from the oven and let cool then gently spoon chocolate into the center.  Be sure to leave a little room at the top for liquid (Frangelico). 
  8. Place in freezer to speed up cooling. While in freezer, mix together a shot with 1/2 Frangelico and 1/2 Almond Milk.  
  9. Remove cookies from freezer and serve with liqueur.  
  10. Pour small amount into each cup before consuming, if desired.

I love items that can serve more than one purpose…I also considered using the ring dish for cocktail cherries and the catchall for holding a champagne glass or two :)
