Chocolate Espresso Stuffed Cherry Bites


After last week’s kitchen catastrophe that lead to the labor of love which resulted in my Beeting Heart Smoothie Bowl, I really wanted to share something simple that involved very little time and only a few ingredients. 

They say less is more and while some would argue that more is more (when it comes to romance at least), I tend to prefer something simple and sweet.

Dark Chocolate Espresso Stuffed Cherry Bites {gluten free, dairy free, vegan}

That could be that I am really just not much of a Valentine’s Day person but that’s not to say that I don’t enjoy a little somethin’- somethin’…especially when it comes to treatin’ myself. 

Typically, I will finish dinner off with a square of dairy-free dark chocolate.  It’s been my habit for a while and helps to quell the sweet cravings and also gives my brain the signal that I’m done eating for the night. 

Sometimes my chocolate cravings are a little more involved though and that’s how these Chocolate Espresso Stuffed Cherry Bites came about.

Besides having a thing for dark chocolate, I also have a thing for coffee and lately, I’m also all about the dark sweet cherries. Not only are they tasty but they are also a great little pre-workout treat 😉 

Anyway, my intense chocolate/coffee/cherry cravings hit me HARD one night this past week and a light bulb went off.  

Thankfully, I had all the ingredients I needed so I was able to get to work rather quickly making these come to fruition.  

With just melted chocolate, instant espresso and frozen dark sweet cherries (although fresh would work and probably be prettier), these little treats were ready to nibble on.

I should mention that you DO need a chocolate drizzler….or as I like to call it, injector.  Sounds scary but it’s really quite useful.  I bought mine from Pampered Chef which is also available to purchase from Amazon.

Chocolate Espresso Stuffed Cherry Bites {GF, V, Dairy Free,}


RECIPE

Ingredients: 

  • 12 frozen or fresh pitted dark sweet cherries 
  • 1/2 cup dairy free chocolate chips (I used Enjoy Life brand)
  • 1-2 tsp instant espresso 

 

Directions: 

  1. Line small baking sheet with wax paper.
  2. Pit fresh cherries or if using frozen, have them thawed at room temperature. 
  3. Place chocolate chips into a large mug and microwave in 15 seconds intervals to melt, stirring each time until completely melted. 
  4. Spoon in and mix the espresso powder. 
  5. Fill chocolate drizzler and injection into each cherry individually. 
  6. Place on wax paper and drizzle with extra chocolate, if desired. 
  7. Enjoy immediately or place in freezer to enjoy as a frozen treat.
