I LOVE smoothies. Like, seriously and truly, really love them. I actually make a smoothie every day and usually have it post workout or as a late breakfast. For the month of October I felt it was only appropriate to make a pumpkin smoothie! Pumpkins have ton of health benefits that you may not know about. They are chock full of vitamin A which boosts immunity and aids in eye health. They are also high in potassium which is great for refueling after a hard workout and they’re high in fiber! The pumpkin seeds even boast a variety of health benefits and can reduce cholesterol and even boost your mood! Woohoo! 😀
Even though pumpkin is a superfood by itself, I took this smoothie to the next level by adding cacao powder, the superior greens- which taste pretty awesome by the way, protein powder and my secret ingredient; pumpkin. spice. tea. Heck yeah! (How many grammar felonies did I commit in that sentence? Don’t know. Don’t care). Plus I topped it with some pumpkin seeds, aka pepitas, and cacao nibs for some extra crunchy superfood goodness.
- 1 cup unsweetened vanilla almond milk
- 1 handful of ice
- 2 heaping tbsp pumpkin puree
- 1 scoop of chocolate protein powder (I used Puritan's Pride Vegan Chocolate with Quinoa & Oats)
- 2 tbsp cacao powder
- 1 scoop Superior Greens
- 1 bag pumpkin spice tea (bag ripped open, use leaves only)
- 1 tbsp pumpkin seeds for topping
- 1 tbsp cacao nibs for topping
- Blend all ingredients together except seeds and nibs.
- Pour into large glass and top with pumpkin seeds and cacao nibs.
- Enjoy! :)
