Chocolate Pumpkin Waffles {Vegan & Gluten Free}


Am I ever glad it’s Friday.  No, seriously, I know I say that a lot but it has been a looooong week and I cannot wait for two days of “rest”, “relaxation” and of course, weekend waffles…like these Chocolate Pumpkin Waffles….mmmm.

Since today’s Foodie Friday theme is “Choctober”, I figured I’d combine chocolate with the flavors of October…AKA pumpkin, only seems natural right? I thought so. 

Except these are the Chocolate Pumpkin Waffle recipe that almost wasn’t.  I swear all the forces of nature were out to prevent me from sharing this amazingness with you and if you have a minute or two, I’ll tell you why. 

Perfect for fall, these easy to make gluten free and vegan chocolate pumpkin waffles are satisfying with just the right amount of sweet and spice!

Yesterday (yes, I TOTALLY procrastinated making these), I ran to the store to grab a can of pumpkin.  With my three year old in toe, I managed to make it out of the supermarket with only 10 more items than I went there for in less than 25 minutes.  

I thought I was good.  I had about a 1/2 hour to whip up the waffles, throw them on the iron, photograph and make my magic happen.  

As I was unloading my bags I discovered that I had all the other nonsense that I purchased but no can of pumpkin puree was in sight.  Thinking it may have gotten left in the cart, I checked the receipt only to discover that the item WAS scanned and I had in fact paid for it.  

UGH. WHYYYY? Because that is my luck when I am in a hurry, apparently.  

So, back to the supermarket with my three year old again in toe to retrieve this .99 cent can of pumpkin puree I went.

FINALLY after an hour of wasted time, I was able to whip these up, do a mini photo shoot and then obviously devour them as nature intended.

CHOCOLATE PUMPKIN WAFFLES


 

RECIPE

Ingredients: 

  • 3/4 cup pumpkin puree
  • 1 cup unsweetened almond milk
  • 1 flax egg
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1.5 cups gluten free all purpose flour 
  • 2 tsp baking powde
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp sea salt
  • 1/4 cup vegan chocolate chips 

DIRECTIONS: 

Heat waffle iron.

  1. Mix dry ingredients and wet ingredients separately then combine together
  2. Spoon mixture into iron- it will be thick so you won’t be able to pour it. Make sure it is spread evenly.
  3. While waffle is cooking, melt chocolate chips in a microwave safe dish in 10 second intervals stirring vigorously in between. 
  4. Once waffles are done (they will take a little longer than normal), plate and drizzle with melted chocolate. 
  5. DIG IN.
