Chocolate Turtle Dessert Parfait {Gluten Free, Vegan}


I have never really been a candy person, nor have I been a dessert person for that matter.  Usually I am good with just a square of dark chocolate or a just a taste of something sweet to satisfy my sweet tooth….that was until I began making my own treats at home.

Around the time I started my blog, I also started experimenting with finding natural sources of sugar to make dessert.  While I still am not a sweets person per say, it kinda snowballed into seeing exactly what flavors I could create and now I’m a bit obsessed.

Recently, I made No Bake Carrot Cake Bites using Bard Valley Natural Delights Medjool Dates.  They were simple to make, naturally sweet and packed with potassium and perfect as a post workout snack.  Needless to say, I gobbled them all up along with another container of them in literally no time at all.  

HOWEVER, I still had a box of the Organic Medjool Dates hanging around and while I hesitated to break into it (seriously, I was eating the dates like candy after my workouts), I reserved it to make this ridiculously amazing Chocolate Turtle Dessert Parfait.

It wasn’t until I began eating Medjool dates by the container full that I realized how much they kinda taste like caramel only to find out that everyone else thinks so too (it’s a thing).  Anyway, with National Chocolate Caramel Day coming up and all, my first thought was to make Turtles which somehow spiraled into making this Chocolate Turtle Parfait.

At first glance you’d probably think that it’s all sorts of unhealthy but once you dig in (see what I did there?), you’ll discover that it’s packed with plant protein, chia seeds and an entire layer of Medjool date “caramel”.  It contains TONS of potassium (50% more than bananas!!!) which makes this parfait the perfect way to TREAT YO SELF after a hard run or workout!

RECIPE

Ingredients:

  • 1 cup unsweetened vanilla almond milk
  • ⅓ cup chia seeds
  • 30g scoop vegan chocolate protein powder
  • 10 Bard Valley Organic Medjool Dates, pitted
  • ⅓ cup whole pecans + more for topping, if desired
  • ½ cup vegan chocolate chips, melted

 

Directions:

  1. Prepare chia pudding the night before by combining milk, chia seeds and protein powder in a mason jar.
  2. Shake vigorously then place lid and cap on top.
  3. Place in fridge for at least 4 hours or overnight.  It will be done once the chia seeds have completely absorbed liquid.
  4. Later or the next day, prepare Medjool date caramel by pulsing the dates in a food processor along with hot water.  Add water in small increments until a creamy paste forms.  
  5. Remove chia pudding from fridge and then in a separate glass layer pudding, pecan halves, Medjool date caramel and melted chocolate chips [tip: melt & stir chocolate chips in 10-15 second increments].
  6. Top with chopped pecans, if desired.
  7. Enjoy! :)
