Paleo Coconut Haystack Cookies

Today I am excited to share a new recipe with you guys, my coconut haystack cookies. Growing up I was not someone you would find eating anything involving coconut. I was not a fan of the mellow taste, or the stringy consistency. But as I grew up and my taste buds changed and matured I gave coconut another chance and fell in love.
It is kind of funny how you can go from not touching something to not only incorporating it our diet but using so many new products made from it. From shredded coconut, coconut oil to coconut milk you can find it all in my recipes. I am what they call a coconut fanatic.
I recently found some shredded coconut on sale at my local Sprouts and decided to buy it. If you know much about food bloggers you know that new ingredients mean instant recipe experimentation. Then before you know it after recipe fail after recipe fail something clicks and a recipe is born.
I have a passion for taking delicious and popular desserts and remaking them with healthier and whole ingredients. Now don’t get me wrong I believe in balance, and sometimes the cake or ice cream wins, but I am not a fan of the sugar rush that follows. But life’s to short to only get dessert every once in a blue moon, so these recipes are the perfect solution to eat what you want and still feel good inside and out.
They are paleo, gluten free, refined sugar free, and vegan. Containing only 4 ingredients these coconut haystacks are simple, easy and sure to curb your cravings.
COCONUT HAYSTACK COOKIES
1 cup shredded coconut
½ cup almond butter
¼ cup agave
1 T chia seeds
Preheat oven to 350 F. Combine shredded coconut, almond butter, agave and chia seeds. Scoop out into 7-8 cookies onto a greased baking sheet. Bake for 15-20 minutes. Remove from oven and let sit. Once cooled down enjoy!
