Coffee Cake Power Granola


You may have noticed my absence lately – or lack of regular posts and for that, I apologize.  Right before the 4th of July I finally had surgery to get my gallbladder removed.  I am happy to report that all went fairly well and even got to spend a week of my recovery laying low in Ocean City, Maryland. 

I am no longer suffering from the extreme nausea that I was before BUT there are still some things going on particularly when it comes to my large intestine.  I hesitate to go into too many details until I see my surgeon for a post-op appointment tomorrow but I do know for a fact that I have what’s known as a redundant colon – meaning there is simply too much of it for my body to house.  

It’s twisty, long and all sorts of loopy which is causing a majority of my issues.   For now, I am just being treated with lots of prescription meds to help push along the digestion process along with a higher fiber diet which includes foods like oats, blackstrap molasses and of course, coffee for good measure! 😉 

Since I am already a pretty big granola fan, I decided to whip up some with those ingredients and serve them in a big fat MUG since it’s the perfect power breakfast to fuel the day.

Although I was still in recovery mode food-wise during my vacation (except the last day when I went a little overboard), I came home craving routine and real food to help get my system back on track. 

Like I mentioned before, granola is kinda my jam and since it’s so quick and easy to whip up (and packed with all sorts of fiber), I figured it would be a good place to start.

The oats themselves have a high fiber content but I wanted to take it a bit further and add in some extra awesome ingredients to make it more power-packed.

In order to take it up a notch I used blackstrap molasses (which I’ve recently begun adding to my diet), unsweetened apple sauce along with almond flour and real coffee grounds to give it all that coffee cake cake cake flava.

It also doesn’t hurt to eat it with a sassy spoon…makes it just that much more scrumptious! 😉

Coffee Cake Power Granola {GF, Vegan}


RECIPE

Ingredients: 

  • 4 cups gluten free old fashioned rolled oats
  • 1/3 cup coffee grounds
  • 1 scoop vegan vanilla protein powder (I used Nuzest)
  • 1 tsp coffee extract
  • 1 tsp vanilla extract
  • 1/3 cup almond flour 
  • 6 oz unsweetened apple sauce
  • 1/4 cup black strap molasses
  • 1/2 cup chopped pecans

 

Directions: 

  1. Preheat oven to 350 degrees
  2. Add all the ingredients except pecans into a mixing bowl.
  3. Combine mixture until evenly until large clusters form (some will still be loose, that’s okay).
  4. Line a baking pan with parchment paper and pour the mixture on, distributing evenly. 
  5. Bake for approximately 15 – 20 minutes, remove and spoon mixture around so that it doesn’t burn and place back in the oven.  Bake for another 10 minutes- watch to make sure it doesn’t burn and remove sooner, if needed. 
  6. Remove from oven and let cool.
  7. Pour granola into a large bowl along with blueberries and almonds and mix. 
  8. Store in airtight mason jars.
