Copycat Shamrock Shake {Dairy Free}

Do you ever have one of those days where just nothing seems to go quite right? That was my Thursday.  I woke up and got my run in and then everything went to crap after that.  My phone broke (temporarily), I had flooring installation issues at my new studio and my camera just wouldn’t cooperate when I tried to photograph my recipe.  

My recipe being a Copycat Shamrock Shake since today is National Chocolate Mint Day and our theme just happens to be “Copycat Recipes”! 

Honestly, I thought this whole Copycat Shamrock Shake would be simple enough. I had already problem solved the whole making it dairy free thing.  I already knew that I couldn’t sub the popular avocado because of my allergy so I decided to find myself some dairy free mint chocolate chip ice cream instead. 

Problem is, none of the dairy free mint chocolate chip ice cream I could find was well…minty looking.  So I was back to problem solving and while perusing the aisle of the health food store I spotted some powdered greens and it clicked! I could make it green and healthy with some of the powdered greens I had at home! Problem solved! 

Then…my phone started acting up and my camera was acting wonky (probably my fault) and I kept getting interrupted with phone calls as my poor little dairy free shamrock shake began to melt.

Long story short…I did get a few pictures and it does taste minty and chocolatey and very shamrock shake-like.

Oh and I forgot to mention the fact that none of the grocery stores I went to had any mint….way to kill my photo vibes grocers.  No worries though, I replaced it with some super vibrant green sprinkles instead šŸ˜‰ 

All of the mishaps are made up for with the fact that this shamrock shake is low in sugar…and I mean loooow.  Since I made it using SO Delicious Mint Chip Dairy Free Frozen Dessert that only has 1 gram of sugar per 1/2 cup …it’s legit almost as low as it can go.

COPYCAT SHAMROCK SHAKE {DAIRY FREE}


RECIPE

Ingredients: 

  • 1 cup SO Delicious Mint Chip Dairy Free Frozen Dessert
  • 1/2 cup coconut milk 
  • 1 scoop powdered greens (like Healthy Skoop or Pro Alpha)
  • 1 tbsp SO Delicious Cocowhip
  • vegan chocolate chips and green sprinkles for garnish, optional

Directions: 

  1. Blend Mint Chip, milk and greens until smooth.
  2. Top with Cocowhip and garnish with chocolate chips and sprinkles, if desired. 
  3. Enjoy!
