Creamy Coffee Protein Crepes {Gluten Free, Dairy Free}

I am BIG on breakfast.  During the week I typically have eggs of some variety with either gluten free toast or sweet potatoes or a smoothie/protein powder concoction.  On the weekend, my hubby whips up gluten free pancakes with bacon, eggs and the works.  

While my kids would say that I am most definitely better at making eggs (I am), they would also say that he is WAY better at making pancakes…which, he is.  For whatever reason, I cannot make pancakes for the LIFE of me…at least not consistently.  Usually, I get the first one to come out and then it all goes to garbage after that.  

Maybe it’s for this reason that I prefer waffles over pancakes or it also might have to do with the fact that they are just a little bit heavy for my liking.  Usually I eat a total of one because I love to slather it with almond butter, roll it up and chow down.  

At one point a few weekends ago, I  decided enough was enough and asked my husband if he could possibly try making me crepes (using the pancake batter) instead.  To my surprise, he confidently said he could (I had my doubts) but a few minutes later I had these amazing looking “crepes” on my plate.

As I was spreading on the almond butter, it occurred to me that my aforementioned protein powder concoction would be the absolutely PERFECT filling. 

You see, when I am feeling extra lazy or we are running low on almond milk, I mix a scoop of plant protein powder along with nut butter and milk in a bowl to create this thick “smoothie” or paste for lack of a better term.  Typically I top it with blueberries and go to town but sometimes when I am feeling fancy I whip out the espresso powder and turn it into a coffee flavored creation.

Anyway, my point being that spreading it into these light and fluffy crepes takes it to a WHOLE other level.

Clearly, this isn’t something I have time to whip up during the week thanks to my lack of skillet + batter skills but you bet your buns that they are my new favorite way to refuel after a long run or workout on the weekend.

Creamy Coffee Protein Crepes {Gluten Free, Dairy Free}



For the crepes: 

  • 1 tbsp olive oil
  • 1/2 cup dry gluten free pancake mix
  • 1/2 cup non-dairy milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp coffee extract


For the filling: 

  • 25g vegan vanilla protein powder 
  • 2 tbsp cashew butter 
  • 1/4 cup+ non-dairy milk 
  • 1 tbsp instant espresso powder 
  • 1/4 cup melted vegan chocolate (for topping, optional)


  1. Heat pan and coat with olive oil evenly to create a non-stick surface. 
  2. Pour just enough of the batter to cover the bottom of the pan, tilting to cover evenly. 
  3. Cook until golden brown then gently flip and cook the other side until golden brown. 
  4. Transfer to a plate. 
  5. Make the filling by mixing the protein powder, milk, nut butter and espresso in a medium bowl.  Add additional milk if needed until it creates a thick filling. 
  6. Spread filling using a knife on each of the crepes then roll up carefully and plate. 
  7. Drizzle with melted vegan chocolate, if desired.
