Cucumber, Tomato & Lemon Balm Salad

Lemon balm

Lemon balm is a perennial herb that resembles mint but with a lemon flavor and scent to it.  When a bunch arrived in my CSA box, I struggled to come up with a recipe right away.  I was thinking all of these complicated and predictable dishes like sage and lemon balm chicken (ok, not complicated but predictable). A smoothie recipe even came to mind, which I think would have tasted really good but I had my heart set on using it in a dish.  

In the end, I decided on something quick and simple. In my conception of this dish, I was going to spiralize cucumber, add tomatoes and mix it with this fragrant lemony leaf.  What really happened was that my spiralizer was too small for the extra large cucumber I had and it needed to be chopped up instead.  Disappointing only because it didn’t take as pretty of a picture, but tasted the same nonetheless.

  1. -1 large cucumber or two medium (if you want to spiralize and make it look pretty)
  2. -2 tomatoes
  3. -1 bunch of lemon balm
  4. -1-2 tablespoons olive oil (depending on size of produce)
  5. -dash of onion powder
  6. -dash of garlic powder
  7. -salt & pepper (to taste)
