Curry Sweet Potato Straw Fries with Basil Mayo {Paleo}


When it comes to sweet potatoes, I will find any way I can to incorporate them into my diet.  Back when I was marathon training, I was making homemade Sweet Potato Recovery Fries on the daily.  I couldn’t get enough of them. 

Then, within the last year or so, I got a bit lazy in the kitchen and just stuck with a simple steamed sweet potato.  Of course, that got boring after a while and I began craving something a bit more flavorful so I decided to take a stab at making a different variation of the crispy spuds and went for what is commonly known as shoestring or “straw fries”. 

I am normally a steak fry kinda girl but I was in the mood for something super crunchy so straw fries it was.  These aren’t just any straw fries though, they’re curry straw fries…drizzled with homemade basil mayo and they. are. BOMB.

To accomplish shoestring or straw effect I used my handy spiralizer.   Believe it or not, I don’t have a fancy one and I think they came out pretty awesome – but if you have a higher quality spiralizer then I can only imagine that these would be much stringier. 

It’s one of the the reasons I chose to call these “straw fries” and not “shoestring fries” ….they turned out more strawy than stringy 😛 

Anywho, it doesn’t change that they’re pretty darn delicious, especially if you love Thai flavors like I do! 😉

Curry Sweet Potato Fries with Paleo Basil Mayo


RECIPE 

Ingredients: 

For Curry Fries: 

  • Approx. 1.5 cups spiralized sweet potatoes 
  • 2 tbsp coconut oil (melted)
  • 1/2 tsp curry powder 
  • 1/4 tsp turmeric 
  • 1/4 tsp garlic salt (or garlic powder and sea salt, to taste)
  • Ground pepper, to taste

For the Basil Mayo: 

  • 1 egg
  • 3 tbsp lemon juice
  • Splash of ACV (Apple Cider Vinegar)
  • 1 1/4 cup olive oil, divided 
  • 1 clove of garlic
  • 1/2 cup fresh basil leaves

Directions: 

  1. Preheat oven to 400 degrees. 
  2. Toss spiralized potatoes with coconut oil, curry, turmeric, garlic salt and pepper. 
  3. Line a baking sheet with parchment paper and bake for approximately 10 minutes or until crispy. 
  4. While fries are baking, make mayo by blending egg, lemon juice, vinegar and 1/4 cup of oil in a processor. 
  5. SLOWLY add in the remaining cup of oil (this is important). 
  6. Once thick, add in garlic and basil and process until smooth.
  7. Place fries in a bowl and drizzle with mayo.  Garnish with extra basil, if desired. 
  8. Enjoy!
