Drool Worthy Eats & Recipes to Celebrate National Gluten Free Day!

Did you know that today is National Gluten Free Day? Apparently I have missed out the last few years because it happens the 2nd Monday in January every year since 2014.  The day was created to help spread awareness about gluten free living and educate all about gluten free living.

Personally, I have been eating gluten free for about 10 years now.  It all started when I realized that my tummy trouble involved more than the occasional upset stomach.  It was suggested to me that I cut out gluten (along with dairy and soy) and WOW it made SUCH a difference.  Not only in the way that I felt tummy-wise but also with my overall wellness.

I was less tired, had more energy and my stomach seemed to be quite happy.  Eventually I ruled out celiac just to be sure that wasn’t the root of my issues but was told that I likely had a sensitivity and if I felt better not eating gluten then just DON’T eat it.

Since then, I have spent a lot of time in the kitchen perfecting recipes that were made of whole naturally gluten free foods and trying out different gluten free products that I could eat when in a pinch and didn’t have enough time to cook.

SO, in honor of National Gluten Free Day, I have decided to share my favorite and most popular drool worthy recipes and eats!

The GFB Power Breakfast

GFB Power Breakfast

So this isn’t a recipe of mine but the GFB has been a favorite gluten free products of mine for a long time now.

As the company slogan says, “you don’t need to be gluten free to enjoy the GFB”.  These little bites are pretty magical not to mention that they’re made with simple, non-GMO ingredients.

The goal of the GFB, which was started by two brothers who “don’t do well with gluten” is to “make stuff that tastes really good and is actually good for you”.  As someone who is gluten free and likes yummy food and also doesn’t do well with gluten – I can attest that they have done just that.

In fact, their Gluten Free Bites have been a favorite of mine for a while – they’re snack size and perfect for runners looking for a quick way to satisfy their “runger” on the go.

More recently I just gave their Gluten Free Power Breakfast a try and am equally impressed! These little bowls are “like oatmeal but better” and feature a three different cuts of gluten-free oats along with nuts, seeds and dried fruit all in a unique “pop-up bowl”.

This portable packaging makes it easy to just fill with water, heat and take with you on the go and come in five yummy flavors; Fruit, Nuts and Seeds, Apple Cinnamon, Maple Raisin, Coconut Cashew and PB & J!
