…let the chaos ensue.

Do I have you singing the song yet? :) That’s a nod to the little diddy Adam Sandler sang in the movie Billy Madison…the last part was my clever addition.

I say the word chaos only half joking. To be honest, as much as summer is a fun little break, I always look forward to the the kids return to school. It brings back much needed schedule and routine…and I thrive on routine especially when it comes to fitting in my morning workout.

However, adjusting to the first few weeks of that routine is always chaos. The kids despise waking up earlier, they dislike having to get dressed and I pretty much have to force feed them breakfast before shoving them out the door. It’s not pretty.

It’s only the second full week back to school and I’ve had enough so I decided to simplify what I could. While getting up early might never be fun and getting their hair brushed will always be a battle, I came to the realization that enticing them with cookies for breakfast is really my only way to make these crazy mornings a little easier. I mean, who doesn’t like cookies for breakfast? Especially kids.

Obviously handing them sugar-packed regular cookies is not an option. It’s not like I’m above bribing my children with sweets per se but when it comes to breakfast, I want it to be nutritious and help fuel their active brains. I’ve been using Medjool Dates for some time now to sweeten everything from my No Bake Carrot Cake Bites to my Naturally Sweetened Granola to my Chocolate Turtle Dessert Parfait. Medjool Dates also happen to be high in fiber which helps to absorb natural sugars plus will keeps you fuller, longer.

For this recipe, I pureed Pitted Medjool Dates and mixed it in with oats, sunflower butter, and vegan chocolate chips to make these epic, easy to make and super portable Oatmeal Chocolate Chip Breakfast Cookies!

Allergy Friendly Oatmeal Chocolate Chip Breakfast Cookies


 

RECIPE

Ingredients:

  • 2 ¼ cups gluten free rolled oats
  • 1 tsp baking soda
  • ¼ tsp cinnamon powder
  • 1 tsp sea salt
  • 5 Pitted Medjool Dates, pureed
  • 1 egg or flax egg, if vegan
  • 1 tsp vanilla extract
  • 1 cup sunflower butter
  • ¼ cup vegan chocolate chips *(plus more for drizzling)

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix together all the dry ingredients (except chocolate chips).
  3. Whisk together all the wet ingredients then add them to the dry, mixing thoroughly.
  4. Fold in chocolate chips.
  5. Using your hands, roll into large balls and form into cookies.
  6. Place on baking sheet lined with parchment paper.
  7. Bake for 12 minutes then remove and let cool.
  8. *Drizzle with additional melted chocolate, if desired.

The best part about these cookies, which I failed to mention earlier, is the fact that not only will your kiddos love them but if you’re an active mama like me then they’re the perfect way to fuel before your morning workout.

Along with being a great natural sweetener, Medjool Dates are also packed with potassium. In fact, they have 50% more than a banana. So yes, what I’m alluding to is that you can say bye bye to your bananas and grab one of these cookies for breakfast instead! Enjoy! 😉
