Easy Gnocchi Potato Salad {Gluten Free, Vegan}


Simple, easy and delicious Gnocchi Potato Salad side dish recipe that’s dairy free, gluten free and perfect for a cookout or party!

Hooray, it’s Monday! I swear I am excited and not being sarcastic! :) As much as I love the weekend, I am craving some stability and routine especially with all the craziness that’s been going on lately.  It might sound a little bit drastic but I decided to start another half marathon training cycle today just to keep myself on track.  

Time consuming? Eh, maybe but it gets my butt out of bed in the morning and keeps me accountable and moving forward.  

Anyway, none of that has anything to do with today’s recipe….other than the fact that I came up with it in a time of chaos and despair.  

You see, my husband was out of town this weekend and with a million things on my to do list, dinner didn’t cross my mind until I was hungry.  Actually, I was beyond hungry, I was straight up HANGRY. 

After scouring the cupboards I found some gluten free gnocchi that I never made and decided in a stroke of hungry genius that it needed to become a pasta/potato take on traditional dairy laden potato salad.

Sounds kinda strange to use gluten free gnocchi when you could just use naturally gluten free potatoes BUT in my defense, the gnocchi actually takes LESS time to cook which puts it in my belly just that much faster! 😉

Other than being easy to make and ready in a flash, the best part is that it tastes delicious too and is the perfect side dish for a party or summer cookout!

Gnocchi Potato Salad {Gluten Free, Vegan}


RECIPE

Ingredients: 

  • 3-4 large carrots, chopped
  • 3-4 stalks of celery, chopped
  • 1/2 red onion, chopped
  • 1.5 lbs gluten free gnocchi 
  • 1/4 cup olive oil
  • 1-2 tbsp white vinegar
  • 3 tsp dry mustard
  • salt and pepper, to taste
  • 2 sprigs fresh dill 
  • 2 tbsp fresh chives

 

DIRECTIONS: 

  1. Prepare and chop vegetables.
  2. Bring 4 quarts of water to a rolling boil, add in a pinch of salt then gnocchi and stir. 
  3. Add pasta to water and stir.
  4. To bring water back up to a boil, cover with lid.
  5. Cook for 2 minutes, until al dente and all gnocchi float to the top.
  6. Drain (never rinse) and transfer to a large bowl.
  7.  Add in chopped veggies.
  8. Whisk together oil, vinegar and mustard then add into gnocchi salad mix. 
  9. Season with salt and pepper to taste then mix in fresh dill and chives. Garnish with more, if desired.
  10. Best served after chilling in the refrigerator for an hour but may be served immediately, if desired (or you’re really hungry!) 😉
