Easy Lemon Basil Zoodles {Gluten Free, Vegan}


Just a few weeks ago I made an investment that I really should have made a long time ago and bought myself a big girl spiralizer.  Before purchasing it, I had been working with one that I had but it was rather labor intensive, I always managed to cut my fingers and my zoodles never really turned out the way I had hoped.

Anyway, when this new, fancy spiralizer arrived in the mail I was really excited to give it a try.  My mind began racing with all the endless recipe possibilities but in the end I chose to make something simple.  Simple as in easy to make but don’t be fooled, it’s still packed with flavor.

I think sometimes in the kitchen when we decide we want to get creative we tend to overanalyze and over think all the ingredients that we can possibly use to put together something amazing when in fact, it doesn’t need to be that complicated.  

Keeping a recipe simple and letting the star flavors shine through is the recipe for success when it comes to putting a dish together.  For this low carb zoodle dish, I chose to let fresh garlic, basil and lemon do all the talking and the results couldn’t be more delicious.

You know when you’re cooking something and it just smells so amazing and fragrant that you can’t wait until it’s time to dig in? Yeah, that was me with this dish.  

As soon as this spring-like plate finished it’s little photo shoot I immediately grabbed the fork and quite literally couldn’t help but shoveling it in my mouth.

It’s honestly so simply to make that I might have to invest in a truck full of zucchinis so I can make this dish daily for lunch! It’s that good!

Easy Lemon Basil Zoodles {Gluten Free, Vegan}


 

RECIPE

Ingredients: 

  • 1 medium-large zucchini, spiralized 
  • 1 clove garlic, minced 
  • 2-3 tbsp olive oil
  • 1/2 ounce fresh basil, shredded (I used herb scissors)
  • salt and pepper to taste
  • juice from 1/2 lemon
  • 1/8 pine nuts (not pictured)

 

Directions: 

  1. Prepare zoodles and mince garlic then heat olive oil in large pan over medium to low heat.
  2. Add in garlic and fresh shredded basil.  Cook for approximately a minute or so.  
  3. Add in zoodles and sautĆ© along with basil and garlic.  Squeeze juice from lemon and season with salt and pepper to taste (*and pine nuts if including).  Cook zoodles for about 3-5 minutes, tossing frequently until al dente.  
  4. Remove from heat and plate.  Garnish with basil and lemon wedges, if desired. 
  5. Serve and enjoy! :)

See? I told you it was simple and I promise you it’s delicious too! :)
