Easy Vegan Buffalo Cauliflower Bites for Game Day

Today our recipe focus is on fiber.  My initial thoughts when trying to come up with something full of fiber was broccoli.  I know that I may be in the minority here but I am a serious broccoli lover- other than asparagus and green beans, broccoli is pretty much my go to veggie so I briefly toyed with the idea of making some sort of creative broccoli dish.  

Then, as my thoughts wandered, I recalled broccoli’s cruciferous cousin, cauliflower.  

So other than being high in fiber, cauliflower offers benefits such as having anti-inflammatory properties, boasts a variety of vitamins, helps to increase blood flow as well as being chock full of anti-oxidants! That’s a lot of punch in those white little florets.  

Also, cauliflower is extremely versatile.  You can make rice with it, turn it into a soup, replace potatoes, make pizza and even turn them into little nuggets of buffalo deliciousness.

Now, I realize that the whole Buffalo Cauliflower thing might be a bit overdone at this point and while many make claims that they are a great replacement for the meaty version, I am not really of that camp. 

So why did I decide to make these then? Well for one, because I never have before and I really wanted to see what they tasted like.  The other reason- the timing is perfect since this weekend is the SUPER BOWL.  Can you tell I am a bit excited? Yes, I realize I have shared nearly a dozen Super Bowl snacks already but I couldn’t resist making just. one. more.

So let’s talk about how easy these little Buffalo Cauliflower Bites are to make.  

It’s as easy as a quick chop of the head of cauliflower, baking them, tossing them in flavors that scream football, another quick bake and they are ready to serve!

If you’re a fan of red hot then these are definitely a must- you really can’t go wrong with Buffalo flavored fiber florets 😉 

VEGAN BUFFALO CAULIFLOWER BITES 


RECIPE

Ingredients: 

  • 1 head of cauliflower, chopped into bite size pieces
  • 2 tbsp olive oil 
  • sea salt, to taste
  • 2 tbsp non dairy butter (I used Melt)
  • 1/4 cup Franks Red Hot Sauce 
  • 1 tbsp lemon juice
  • celery to garnish 

 

Directions: 

  1. Preheat oven to 400 degrees
  2. Toss chopped cauliflower in olive oil and sea salt. 
  3. Bake for approximately 20 mins. 
  4. While cauliflower is baking, melt butter then whisk in hot sauce and lemon juice. 
  5. Remove cauliflower from oven and toss with hot sauce mixture. 
  6. Spread bake on lined baking sheet and bake until browned. 
  7. Remove & serve with celery and dipping sauce of choice.
