Easy Vodka Alfredo Mushroom Penne {Vegan, Gluten Free}


Happy Meatless Monday and Leap Day!  Can’t believe that we are at the end of February already and that March starts tomorrow which means SPRING is just around the corner.  Or at least I hope it is.

We had a little taste of spring this weekend with a 60 something degree day yesterday which I obviously took full advantage of by going for my 10 mile long run and soaking up all the sun.  It was literally perfect and while I know that it won’t last, it was a nice break from the rain, snow and general dreariness that February typically brings around these parts.  

Anyway, since I know that we aren’t out of the woods yet and the dreary days of winter will still be around for at least a few more weeks, I decided to whip up a comfort food recipe to share for today!

My husband actually came up with the idea for this dish as we make a similar one using coconut milk to make the Alfredo sauce but he thought throwing some vodka in there would cut the creaminess a bit and make it a little more “cheesy” tasting. 

He actually sent me a text saying “I want to break out the vodka tonight but not for drinking, for cooking”.  As a NON vodka drinker I initially scrunched my nose up a bit.  Not only do I not care for the taste but it tends to not agree with me.  

So before we commenced pouring some into the pasta, I did a little research first on what brand of vodkas, if any, are verified to be gluten free.  Turns out, all vodka is technically gluten free though some who do have gluten sensitivities complain that wheat based vodkas still bother them so it is recommended that you choose one that is potato or corn based instead.

Luckily, we happened to have a bottle of Chopin so I allowed this culinary experiment to move forward and was more than pleasantly pleased with the result.

The vodka really gave some dimension to the dish adding a tang to my dairy free Alfredo sauce that I didn’t know it was missing.  The best part is, this dish takes really only 20 minutes to make and the ingredients are super simple. 

Vodka Alfredo Mushroom Penne


RECIPE

Ingredients: 

  • 1-2 tbsp olive oil 
  • 1 onion, diced
  • 1 garlic clove, minced
  • 2 8oz cartons baby bella mushrooms (or two cartons of mixed mushrooms)
  • 1 can full fat coconut milk 
  • 1/2 cup vodka
  • 1 box gluten free penne pasta 
  • parsley to garnish 

 

Directions: 

  1. Bring a pot of water to a boil. Once boiling, add in pasta and cook according to package instructions.
  2. While waiting for water to boil, heat olive oil on stove top in a large sauté pan. 
  3. Add in onions and garlic and cook from approximately 5 minute or no longer opaque.  
  4. Add in mushrooms and cook down for a few minutes then add in fat from coconut milk, discarding coconut water then mix in vodka. 
  5. Let reduced and let thicken- approximately 5 minutes. 
  6. Remove and drain pasta then mix in with sauce and mushrooms. 
  7. Garnish with parsley, serve and enjoy!
