Foodie Friday: Apple Crisp Protein Parfait {Vegan, Gluten Free}

Did you know that it’s National Apple Week? While some foods are only celebrated for a day, apples get a whole weeks worth of recognition since they are jam packed full of tasty health benefits.  

The whole idea of “eating an apple a day to keep the doctor away” has some truth to it since they contain pytonutrients that help regulate blood sugar, flavanoids that may help increase bone density and antioxidants such as quercetin that have shown to help protect brain cells. 

We obviously had to get in on the celebration so for Foodie Friday today, were are sharing some deliciously healthy ways to enjoy an apple!

While, I’m a fan of a plain, fresh, crisp apple by itself- I figured since we are approaching Fall, I’d share a healthy apple crisp recipe thats packed with some extra protein. The protein is acting as a replacement for sugar and since it’s vanilla it add some extra yummy flavor!  It is perfectly sweet enough for dessert though it could be enjoyed just as easily for breakfast! 😉 

Apple Crisp Protein Parfait {vegan, dairy free, gluten free, breakfast parfait, protein parfait}

This parfait is super simple to make and is both gluten free and vegan.  If you want to enjoy it for breakfast, the recipe yields a few servings so it would be perfect for meal prep.  Or, of course, it would make a delicious after dinner treat or dessert for a get together! Bonus: it’s portable since they’re made in these half pint mason jars.

APPLE CRISP PROTEIN PARFAIT 


 

RECIPE

Ingredients: 

  • 2 large Granny Smith apples, peeled & sliced thin
  • 1 + 1 tsp ground cinnamon 
  • 1 dash of nutmeg
  • 1 pinch of sea salt
  • 1 tbsp water
  • 2 + 2 tbsp coconut oil 
  • 1/2 cup gluten free oats
  • 1/2 cup coconut flour 
  • 1/2 scoop + 1/2 scoop vegan vanilla protein powder (I used Pro Alpha Nutrition)
  • 1 6oz plain dairy free coconut yogurt (I used So Delicious)

 

Directions: 

  1. Preheat oven to 350 degrees. 
  2. Heat large pan over medium heat with 2 tbsp coconut oil on the stove top and add sliced apples, 1 tsp cinnamon, nutmeg, sea salt. 
  3. Cook for approximately 5 minutes then add water. 
  4. Reduce heat to low and cover allowing to cook for 10 minutes or so then remove from heat. 
  5. While apples are cooking, mix oats, coconut flour, the rest of the coconut oil and cinnamon and 1/2 scoop vanilla protein powder in a medium bowl. 
  6. Line a baking sheet with parchment paper then spread mixture evenly. 
  7. Bake for approximately 10 minutes- checking to ensure that it doesn’t burn then remove and let cool. 
  8. While both the apples and granola are cooking- mix the remaining 1/2 scoop of protein powder into the 6 oz of yogurt. 
  9. Assemble the parfait in 1/2 pint mason jars layering yogurt, apples then topping with granola. Make sure to evenly divide yogurt among the three jars first then proceed with layering apples & granola. 
  10. ENJOY! :)

 

NOTE: Makes about 3 1/2 pint parfaits.

YUM! I am one of those people that is all over fall flavors, give me any and everything apple and pumpkin! I pulled out pumpkin peanut butter already I had stashed from last year (stocked up buying a few extras). I have been fighting the urge to get in the kitchen to create fall things on my list. Of course it helps that things aren't really in season yet but I have a few pie pumpkins that are already ready that I hope don't get bad while we are gone. As soon as we get back from our vacation I am going to be a crazy woman in the kitchen!
