Foodie Friday: Avocado Anytime of Day {Gluten Free}

Avocado recipes for anytime of day: breakfast, lunch, dinner and dessert! {gluten free}

Sad fact: It has been nearly 6 weeks since I last ate an avocado upon discovering I have histamine intolerance and they were part of the problem.  While that may not seem like a long time to go without an avocado for some of you, it is for me. 

Seriously, avocados had become part of my daily diet.  I was finding a way to incorporate them into everything I ate, had them morning, noon and night.  I was even on a roll when it came to avocado recipe creations.  

Unfortunately, that came to a crashing halt when I realized that avocados made the AVOID list on all the low histamine diet lists….a little piece of me died that day but that doesn’t mean my love for avocados doesn’t live on. 

Since it would be quite a waste to develop a new recipe unless I was sure that my hubby or kids would eat it (I will eventually but time has not been on my side), I decided to highlight some of my previous avocado creations instead of them getting lost in the archives.  

So, for all you avocado lovers, I present to you recipes so you can enjoy avocados #alldayeveryday.

BREAKFAST

Mexican Avocado Omelet {gluten free, vegetarian, meatless monday}

Open Face Mexican Omelet with avocado anyone?! While one of my absolute FAVORITE ways to enjoy avocado for breakfast was mashed on some gluten free toast, my other favorite way was in a Mexican omelet! So delicious. So filling. So perfect. 

LUNCH

Green Goddess Sandwich with Avocado {gluten free}

Good gracious this Green Goddess Sandwich is one way to make lunchtime exciting again.  The avocado adds a level of creaminess that makes this sandwich perfect even without dressing….though a little dressing would definitely take it up a notch! 

DINNER

Strawberry Fields Salad with Avocado {gluten free}

Dinner doesn’t have to include meat to make it delicious.  This Strawberry Fields Salad is more than enough with fresh sliced strawberries, just picked blueberries, perfectly ripe avocado and a delectable drizzle of balsamic glaze.  Perfection on a plate, don’t you think?! 

DESSERT

Fudgescile made with avocado {gluten free}

Last but not least, how about some Dairy Free Chocolate Chunk Protein Fudgesicles for dessert?! They’re gluten free with no added sugar, just pure avocado deliciousness.  They were also recently featured on Parade’s Community Table page along with other decadent avocado desserts!
