Quick and Easy Chicken, Hummus & Arugula Tortilla Pizza {Gluten Free, Dairy Free}

Today our theme is all about pizza but as most of you know who’ve been reading along for a while, I can’t really have pizza. I’m “allergic” to tomato sauce and cheese doesn’t typically agree with me. All that aside even if I wanted to enjoy a slice of ‘za, it would have to be gluten free.  

So when I needed to come up with a recipe to share today I was left scratching my head for a minute. Then a light bulb went off, BFree Foods had just graciously sent me a whole box of allergy free breads, rolls and tortillas to try, why not make a tortilla pizza?! I know, sounds strange at first mention but just follow me here. 
 
Honestly committing to the idea of a tortilla pizza was the easy part. Next I had to come up with an alternative to sauce and toppings that would make sense. Then, I had another light bulb moment. Use hummus! Hummus makes the perfect alternative to sauce and it’s an ingredient that I’ve used as a sub in the past. 
 
Once I had the hummus in mind the rest of the ingredients all fell into place pretty easily- chicken for some protein, arugula for some greens and a peppery bite and balsamic glaze to bring it all together.

 Before we get into the nitty gritty on the ingredients, let’s first go back to the bread.  
 
I mentioned BFree Foods briefly when I shared my Pomegranate and Crushed Pistachio Crostini recipe on New Year’s Day.  Not only are their products gluten free but they are also dairy, soy, nut and egg free.  
 
Their line includes brown seeded and soft white rolls, brown seeded and soft white loaves, multiseed and plain bagels and multigrain wraps as well as quinoa, chia seed and with teff and flaxseed wraps! 
 
The obvious choice out of those was to use one of the wraps (aka tortilla) and make a pizza with it which is exactly what I did! :)

I choice to use the Quinoa & Chia Seed Wrap with Teff and Flaxseeds to make my Tortilla Pizza just to give it that extra dimension of crunch and flavor.  
 
These honestly turned out fantastic and I could not be happier with how delicious these gluten free wraps (and the rest of their bread line) taste and better yet, don’t crumble! 
 
Making these little healified pizzas was pretty easy too and only required the wraps to bake briefly in the oven to get ’em crispy then another 2 minutes to top with my ingredients and they’re ready to serve!

Oh and you can’t forget to drizzle them with some balsamic glaze- it really bring the “pizza” together!

Chicken & Hummus Tortilla Pizza


RECIPE

Makes 2 “tortilla pizzas”

Ingredients: 

  • 1 tsp olive oil
  • 2 BFree Quinoa & Chia Seed Wrap with Teff and Flaxseeds
  • 1 container of hummus (I used pine nut flavor)
  • 2 handfuls baby arugula 
  • 1/2 cooked chicken breast, shredded 
  • balsamic glaze

 

Directions:

  1. Heat oven to 400 degrees leaving baking sheet in oven while preheating. 
  2. Lightly spray or brush both sides of wrap with olive oil then carefully remove baking sheet from oven with oven mitts and place wrap on it. 
  3. Bake for approximately 5 minutes, turning over once at the halfway point.  Watch carefully making sure not to burn. 
  4. Remove and top with hummus, arugula and shredded chicken. 
  5. Drizzle balsamic glaze.  
  6. Serve and enjoy! :)

I know you wall want to give this a try! While unfortunately you can’t purchase BFree Foods online yet, they are available in some stores.  In addition to California-wide distribution at Ralphs, Lucky’s, Raley’s and Save Mart, BFree has expanded to DeMoulas Market Basket in the Northeast, ShopRite on the East Coast, Meijer in the Midwest and BJ’s nationwide.
