Foodie Friday: Breakfast Makeover- Vanilla Spice Zucchini Bread

This week is all about taking unhealthy breakfast dishes and making them nutritious AND delicious! I LOVE breakfast, like really love it! It is by far my most favorite meal of the day.  I look forward to waking up and brewing myself a big cup of coffee and enjoying my breakfast before the kids get up.  It is my special little alone time that I get to actually savor a meal and sit and “relax” for 5 minutes- maybe 20 if I am lucky.  

Foodie Friday: Breakfast Makeover

My favorite thing to enjoy with coffee is a piece of bread with a little bit of almond butter.  Most days I just throw a piece of gluten free toast in the toaster oven but when I have time to bake I like to make my own bread, especially of the seasonal variety.  In this case my latest bread recipe being  Vanilla Spice Zucchini Bread.  It really is just so scrumptious especially with a cup ‘o’ joe!

Most of the recipes I have found for zucchini bread are full of unhealthy ingredients like sugar and vegetable oil so in order to give this a healthified (is that even a word?) makeover, I substituted in some applesauce for oil and added a scoop of protein for some nutritional value, flavor and good measure  😉

Vanilla Spice Zucchini Bread

Ingredients
  1. 1 1/2 cup almond flour
  2. 2 tsp cinnamon
  3. 1/2 tsp nutmeg
  4. 1 scoop of vanilla protein powder (I used Vega)
  5. 1/2 tsp baking soda
  6. 1/2 tsp baking powder
  7. 1/2 tsp sea salt
  8. 1 mashed banana
  9. 3 eggs
  10. 1/4 cup unsweetened apple sauce
  11. 2 tsp vanilla extract
  12. 1 cup shredded zucchini, patted dry
  13. 1/2 cup chopped walnuts
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium size bowl combine and mix dry ingredients.
  3. In another bowl mix mash the banana, add whipped eggs and mix.
  4. Mix in apple sauce and extract.
  5. Combine wet ingredients into dry ingredients making sure to mix well.
  6. Once combined, gently mix in zucchini and walnuts.
  7. Pour mixture into a greased bread tin and bake for approximately 45 mins. May have to bake a few minutes longer just to ensure bread is done throughout.
  8. Remove from oven and let cool.
  9. Enjoy!

Waaaaa that sounds delicious!!! I love zucchini bread & have actually been thinking about making some while I can still get monstrous delicious zucchinis. I will definitely be trying this. Thanks for sharing!!

    The zucchinis I got from my mom's garden were HUGE so I had to find some way to use them up and this was perfect! Let me know what you think if you make it :)

    Haha, I totally love you too Montana! Mostly because I think we are pretty much the same person :P I am happy I was able to come up with something that could help with your early morning departure from the house. Five AM is seriously way too early to be at work!

    My body doesn't handle sugar very well either, really which is why I always sub out honey/syrup, etc for protein powder. It gives it flavor plus fills me up for longer!

I love zucchini bread - albeit it is best with creamy grassfed butter smeared all over it, but I like your idea of the almond butter. I never thought of using a scoop or two of protein powder into it. I'm trying this next time I make it....you know when the garden yields that last push of a million and one zucchinis!

Oh em gee! I just need zucchini and I can make this too! *-* I've never made zucchini bread before but have always wanted to try! :]

I use "healthified" all the time. It should be a word if it isn't already. :O
