Foodie Friday: Double Chocolate Sweet Potato Protein Brownies {Vegan, Gluten Free}

Today we are linking up to share recipes that use honey/maple syrup/healthy alternative as a replacement for sugar.  I think it’s fair to say that we all know honey isn’t just a good way to sweeten your tea and maple syrup isn’t just for pancakes.  It can be used as a substitute for sugar in a lot of different recipes, especially baked goods. 

I wasn’t immediately sure what I was going to make to share for today- there are literally endless different cookies, cakes and treats that I could have made.  Then, I was at a BBQ last weekend and the hostess made some gluten free sweet potato brownies for myself and another guest who has celiac.  I fell in love at first bite knew they had to be recreated.

Whipping up my own version was really more simple than I thought it would be.  Using mashed sweet potato, chocolate almond butter, a smidge of honey to sweeten and Pro Alpha Nutrition Vegan Chocolate Protein Powder (review coming soon) for a healthy/delicious protein boost, I was able to create something magical. 

The sweet potato helps these brownies retain their moisture while the chocolate almond butter and Pro Alpha Nutrition chocolate protein give it a velvet- chocolate smoothness that makes them out of this world DELICIOUS!

I literally made these on Wednesday and they were pretty much all gone by Thursday night…they’re that good not to mention guilt free, hooray!

Oh and did I mention that they’re gluten free AND can be made vegan?! :)

Double Chocolate Sweet Potato Protein Brownies {gluten free, grain free, dairy free, vegan, soy free, no refined sugars}

 

DOUBLE CHOCOLATE SWEET POTATO PROTEIN BROWNIES


RECIPE

Ingredients:

  • 1 large sweet potato steamed + mashed (skin removed), about 1 1/2 cups
  • 1 cup Barney’s Cocoa Coconut Almond Butter (or any chocolate almond butter)
  • 1 20 gram scoop Pro Alpha Nutrition Chocolate Protein Powder (or vegan chocolate protein powder)
  • 2 tbsp cacao powder 
  • 1/8 cup raw honey (or maple syrup for vegan option)
  • 1 flax egg 
  • 1 tsp baking soda
  • 1/4 cup Enjoy Life Chocolate Chips (or vegan chocolate chips)

Directions:

  1. Preheat oven to 350 degrees. 
  2. In a large bowl mix together mashed sweet potato, almond butter, protein powder, cacao powder, honey, flax egg and baking soda.
  3. Fold in chocolate chips. 
  4. Spoon into an 8×8 baking dish.  Batter will be thick so be sure to even it out. 
  5. Bake for 22-25 minutes. 
  6. Remove, let cool and ENJOY! :)

 

NOTES:

1. Easiest way to soften sweet potato without boiling is in the microwave on high for approximately 5 minutes (stabbed with a fork and with a small slit on top). 

2. Flax egg= 1 tbsp ground flax + 3 tbsp of water.  Let sit until the consistency becomes yolky like an egg.
