Foodie Friday: Espresso Hot Cocoa {Vegan}

 Today our theme is all out healthy hot drinks.  When I think of hot drinks usually coffee comes to mind but I drink mine black and coffee by itself really isn’t that festive or fun (in the creative sense) so I thought I’d make it a little more interesting by adding some a lot of chocolate to it 😉 

I had all intentions of making this look oh so pretty and inviting and had pictured photographing a pipping hot mug with frothy whipped cream sitting by the fire but, as usual, things never work out the way I want them to.  

Right after I steamed the milk and melted the chocolate I poured it into this festive little mug and headed out into my sun room to take some pictures.  My children stayed in the kitchen and from where I was I could hear them laughing, giggling and cracking up.  At first I didn’t think much of it because usually quietness is a sign of destruction but after a minute of non-stop laughter I decided they were having too much fun to be behaving.  

Upon rounding the corner, I saw a pile of snow inside my house.  Apparently they wanted to build a snowman just like Anna and Elsa……Do you want to build a snowman

Much like Grumpy Cat, I put the kibosh on the snowman assembly and cleaned up the mess to return to my poor espresso hot chocolate creation topped with (what was) whipped coconut cream only to find it melted….much like their indoor Olaf. Espresso Hot Cocoa

Oh well.  You win some, you lose some but it still tasted pretty awesome which is all that matters, right?

Espresso Hot Cocoa

Ingredients
  1. 1 can full fat coconut milk
  2. 1 cup unsweetened almond milk
  3. 3-4 tbsp vegan dark chocolate bar, chopped
  4. 1 tbsp cacao powder
  5. 1 tsp espresso powder
  6. 4-6 drops liquid stevia (optional)
  7. 1 tsp coffee extract
Instructions
  1. Separate coconut milk and fat by scooping out fat and placing into a bowl.
  2. In a medium saucepan bring almond milk and coconut milk to a boil then add in chocolate, espresso and stevia.
  3. Whisk everything together as chocolate melts until completely blended and no more chunks of chocolate remain.
  4. Remove from heat.
  5. Take your bowl of coconut fat and add in coffee extract and more stevia, if desired.
  6. Whisk all together until frothy.
  7. Pour hot chocolate mixture into a large mug and top with coconut whipped cream.
  8. Enjoy! :)
