Vegan + Gluten Free Irish Coffee and Chocolate Cookies {Giveaway}

So this week our theme is “free for all” which is perfect because I am going to get a little crazy.  Not only am I going to spike your coffee, I am also going to veganize it PLUS I’ve got a giveaway for some gluten-free chocolate cookie mix! Told you I was getting crazy, it is Friday, after all! 😉 

Okay, so before we get all caffeinated and tipsy, let’s start off with some crispy, chewy and decadent chocolate cookies!

Ardenne Farm Chocolate Cookie Mix Giveaway

I was recently sent this gluten free and vegan mix from Ardenne Farm to try out. Ardenne Farm’s mission is to provide those who are living gluten-free with tasty and affordable options.  They specialize in making gluten free baking mixes in a dedicated gluten free facility that contain no artificial colors, flavors or preservatives.  All of their mixes are also vegan.  

Ardenne Farm has a variety of different baking mixes to choose from including: Chocolate Cake Mix, Sugar Cookie Mix, Cinnamon Crunch Muffin & Crumb Cake Mix (um, hook me up!),  and Blueberry Muffin Mix to name a few. 

I was sent the Chocolate Cookie Mix with is a gluten free flour blend with cocoa and brown sugar.  The instructions were on the back of the box and could not have been any easier to make.  All it called for was 1 stick of butter and 3 tablespoons of water. 

Since I wanted to keep these vegan, I decided against regular butter and substituted coconut butter instead.  Now, I will be totally honest here….I have never baked with straight coconut butter so I wasn’t sure how it was respond but I decided to find out.

After mixing the coconut butter (8 tbsp) with the mix and the water, I got this almost brownie-like batter.  Since it was vegan I decided to taste it raw and it was pretty yummy. I took the batter, formed them into tablespoon size balls and put them on an ungreased baking sheet.

Twenty minutes later I opened the oven to find crispy, chocolate cookies! They were a little flatter than I thought they’d be (and looked a little different than the picture on the box) but despite the difference in appearance, the first bite was just as chewy as the packaging described.

Both my kids, husband and mom all tried them too and couldn’t refrain from eating just one.  Thankfully the box makes 20 cookies though I actually only make about 15….I used the rest of the dough to make one. big. giant. cookie.

You know what happened? It came out perfectly.  Go figure! So what goes with a perfect, giant gluten-free and vegan cookie you ask? Why, vegan Irish coffee does! 

I didn’t get a good photo of it because I don’t have a super cool clear mug like they use in all the restaurants, you’ll just have to trust me on this one.  

Originally created by an Irish barman, it was served as a warm welcome for American tourists coming off a transatlantic flight.  The recipe he created is a mix of fresh brewed coffee, brown sugar and Irish whiskey topped with lightly whipped cream.  

Vegan Irish Coffee

 To take the traditional Irish coffee and make it vegan (and a little healthier), I simply replaced the brown sugar with SweetLeaf  Vanilla Creme Liquid Stevia and whipped some coconut milk fat with vanilla extract and stevia….I kept the alcohol of course, DUH!

Recipe

Ingredients:

  • 1 cup fresh brewed black coffee
  • 1.5 oz  (1 jigger) Irish Whiskey 
  • 2 + 5 drops SweetLeaf Vanilla Creme liquid stevia (or to taste)
  • 1 can full fat coconut milk, chilled 
  • 1/2 tsp vanilla extract

Directions:

  1. In a medium bowl, beat (with a hand mixer) fat from the coconut milk with a splash of the liquid in the can with vanilla extract and 2 drops of the stevia together until it starts to peak and is fluffy. 
  2. In a mug, mix together fresh coffee, stevia and whiskey then top with freshly whipped coconut cream. 
  3. Enjoy! 

 Pretty easy, right? I supposed you could leave out the whiskey if it’s a weekday but if you’re feeling feisty or festive, it is a necessary ingredient!

uhm, I WANT THOSE COOKIES NOW. except, I would want them thick and chewy, I despise flat cookies, but if they're chocolate, I'd probably manage to suffer through eating them anyway :P As for your wild whiskey drink, you're so creative!

YUM. We went through a phase of dipping chocolate covered oreos into Baileys. I would imagine that these are pretty similar and therefore epic.

    Haha yes, they were a little flatter but I swear they were very tasty. I am not sure why the coconut butter made such a difference, but it did!

    I am sure it would taste just as fantastic with tea! I usually put some fireball whiskey in cinnamon tea when I am feeling feisty and it is quite delicious ;)

Those look amazing! I made a skillet cookie cake once for a friend's birthday and it was delicious! Put a scoop of ice cream on top and you've got a masterpiece.

Oh my!! The Irish Coffee sounds heavenly! What do you do with the coconut milk after you use the fat from it? I bought canned coconut milk but I haven't used it yet.

I have enough trouble making normal sized cookies. I would be worried that it would cook uneven, leaving me with burnt edges and a raw middle.

Does not spacing out your regular cookies enough so they turn into a giant cookie count as giant cookie success? Because if so, then yes, I have :) I don't indulge anymore, but I used to love irish coffee!
