Foodie Friday: Paleo Sweet Potato Sliders

Going get right to it today and cut straight to the deliciousness because today we are dishing up BURGERS! 

When you think of burgers you might think of summertime and firing up the grill but these little burgers that I’ve prepared for you today are perfect for fall and FOOTBALL!  PALEO SWEET POTATO

 I think I’ve made it pretty clear over the course of my last few posts that I am bit football obsessed so forgive me for the next several months as I shift my foodie focus to football friendly treats! 

I actually made these little mini meat nuggets in a muffin tin and baked them in the oven.  No only does it help to portion them out and make them the perfect size for the sweet potato discs but it’s an easy way to make a bunch all at once!

My idea was to originally make these little sliders with gluten free buns but then it occurred to me that mini gluten free buns do not exist and I am not talented enough to bake my own.  The solution? baked sweet potato discs dusted with some cajun spice…can you say YUM?!

These little paleo burgers turned out a lot better than I had even expected and even though they’re mini, they are PACKED with flavor especially with the addition of sliced tomatoes and avocado.

Note: No avocados or tomatoes were wasted in the making of these mini burgers.  The family happily ate them for me! 😉

PALEO SWEET POTATO SLIDERS


 

RECIPE

Ingredients: 

  • 1 lb grass fed lean ground beef
  • 2 sweet potatoes
  • 1 tbsp coconut oil 
  • 1 tsp sea salt 
  • 1 tsp cajun seasoning 
  • 1 avocado, sliced
  • 1 tomato, sliced 
  • 2-3 fresh Boston, Bib or Iceburg lettuce leaves

Directions: 

  1. Preheat oven to 450 degrees. 
  2. Form beef into small meat patties and press into flat into muffin tin.
  3. Place in oven and bake for approximately 10 minutes or to desired doneness. 
  4. While burger patties are baking, slice sweet potatoes into discs. 
  5. Place discs in a bowl and coat with coconut oil and cajun seasoning. 
  6. Line discs on a baking sheet and place in oven for approximately 25 minutes, turning over mid way through. 
  7. Once patties and sweet potatoes are done, assemble by stacking sweet potato, beef patty, lettuce, avocado slice, tomato slice, sweet potato.  
  8. Serve and enjoy! 

Makes approximately 6 sweet potato sliders.
