Foodie Friday: Pomegranate & Crushed Pistachio Crostinis {Gluten Free}

First, of all….HAPPY HAPPY NEW YEAR! I cannot believe that it’s the year 2016! I hope you all had a fantastic New Year’s Eve celebration and were able to ring it in surrounded by loved ones! 

I spent the evening at a small family get together, had a few celebratory drinks and of course, munched on lots of yummy food! One of the appetizers that I made to share were these Pomegranate & Crushed Pistachio Crostinis! 

Pomegranate & Crushed Pistachio Crostini Appetizer Recipe {gluten free}

 The whole idea for this easy appetizer came about when I started searching the web to find foods that are customarily eaten on New Year’s Eve to bring good luck.  I briefly considered making a lentil recipe of sorts since that’s what Italian’s eat to bring good luck until I stumbled across the idea of pomegranate! 

In Greece it is apparently customary to throw a pomegranate on the ground and break them at midnight to bring good fortune! Clearly we won’t be throwing any crostini toasts on the ground but I figured we could celebrate the pomegranate and it’s good luck along side some crunchy pistachios and creamy brie cheese!

 Oh and by the way, I made these using this brand spankin’ new (to me) gluten free and allergen free loaf bread from BFree Foods! I will go into more details in another post but let’s just say that I am in LOVE with their line of products which are all gluten, wheat, soy, nut, dairy and egg free!

Pomegranate & Crushed Pistachio Crostini Appetizer Recipe {gluten free}

 Pomegranate & Crushed Pistachio Brie Crostini




  • 3 pieces of BFree Soft White Sandwich slices, toasted
  • 1 wedge Brie or other soft cheese 
  • 1 pomegranate, seeded
  • 1/2 cup pistachios, shelled and crushed



  1. Cut toasted sandwich bread in a triangular fashion. 
  2. Evenly spread brie cheese on each triangle slice.
  3. Top with pomegranate and sprinkle with crushed pistachios. 
  4. Arrange on a serving platter & enjoy! :)

I think that brie may be the only cheese that I miss as a vegan. My husband and I used to go to a little French Bistro that served the best sandwiches. Just fresh French bread, the brie, tomato, and a little mayo. So this recipe sounds so good and makes me wonder if thereis a way to make a brie substitute out of tofu :-)
