Foodie Friday: Pumpkin Almond Superseed Butter

Happy first FRIDAY of OCTOBER!!! Seriously, when did that happen and where did September go? I feel like this all happened at once, just last week it was ridiculously warm out, I was still wearing a tank and now I’m cuddled up on the couch in my sweats contemplating flippin’ the switch on the fireplace.  

All this cold weather has finally gotten me in the mood for, you guessed it, PUMPKIN.  Not exactly sure how I held off the last month but since our theme today is “fruit butter” and we’re a few weeks into fall,  now seems like the appropriate time to present my first pumpkin recipe of the season.

 Just to clarify, pumpkin is not a vegetable, it is a fruit.  In fact, it’s actually considered a berry.  I only know this because I googled it and obviously, google is never wrong.  

I chose to go with pumpkin over say, apples because it’s just more my jam (pun intended).  Plus the combo of almond butter blended with pumpkin puree is absolutely excellent spread on some fresh picked apples, it’s like a fall flavor explosion in your mouth. 

I also chose to keep this recipe SUPER SIMPLE.  Honestly, you could (should?) totally use raw almonds and make the butter from scratch but let’s be real, this marathon training mama ain’t got time for that!

Instead, I decided to skip that step and simply use raw almond butter straight outta the jar then used a food processor (NOT A BLENDER) to mix the pumpkin puree in along with chia and flax seeds to make this fall inspired fruit butter just that much more super! šŸ˜‰

Pumpkin Almond Superseed Butter {gluten free, vegan, easy, quick, pumpkin butter recipe, foodie friday, #fitfluential, #sweatpink}

 Spread on some apples….yum!

PUMPKIN ALMOND SUPERSEED BUTTER


RECIPE

Ingredients: 

  • 1 cup raw almond butter
  • 1/2 cup pumpkin puree
  • 1/8 cup chia seeds
  • 1/4 cup flax seeds
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1-2 tsp stevia powder or 4-6 drops liquid stevia (add more if want sweeter)

 

Directions: 

  1. In a large food processor, combine almond butter and pumpkin puree and process until mixed. 
  2. Add in chia, flax, spices and stevia and process until completely mixed in.  It may be necessary to stop processor and to scrape down the sides to make sure it all gets mixed. 
  3. Use a spatula to remove pumpkin almond butter from processor and place in an airtight jar.
  4.  Store in fridge.
  5. Enjoy! :)

NOTE: Makes approximately 1 8oz jar. Best used within a week.

OMG I love this! I think I will have to make a batch soon!! I love pumpkin and apples, and everything fall! I think maybe even apple sandwiches with this butter this weekend at the soccer field if I can get it made today, I just ran out of raw almond butter I only have Justin's Vanilla Almond Butter.

This would probably make even cardboard taste delish! This is super genius and I just want to hug you because I know I will be obsessed with this for the rest of fall! Love the hack, I do that alot with cacao nibs and almond butter and I even make some pumpkin spice almond butter. But never thought to add the pumpkin and these super seeds :)

I used to love almond butter...and then I got pregnant with my daughter and my taste buds changed. I can't eat the stuff. SAD FACE. So I'm probably going to make this with peanut butter instead because everything else in it sounds so super good.
