 This week we are all about strawberries! I have to say, strawberries are probably one of my favorite fruits aside from blueberries and over the last year, I have made a handful of strawberries recipes made with juicy, local grown strawberries around the corner from my house.

Strawberries

Unfortunately, the strawberries around here aren’t quite ripe until June so I had to settle for a recipe made with frozen strawberries (except for the garnish).  The first thing that came to mind to make with frozen strawberries was a smoothie obviously! Since I’ve already made a Strawberry Shortcake Smoothie before, I had to get a little creative so I came up with a Strawberry Cheesecake Smoothie!

Recipe

Ingredients:

  • 1.5 cups cashew milk 
  • 1 large handful of frozen strawberries
  • 1.5 tbsp cashew butter 
  • 1 scoop vanilla protein powder, I used Skoop 
  • 1 tbsp ground flax seed
  • 1 tsp vanilla extract
  • fresh sliced strawberry to garnish
  • coconut whipped cream (optional)

Directions:

  1. Combine and blend everything in blender and pour into fancy glass!
  2. Garnish with sliced strawberry, top with coconut whip cream if you please (I didn’t have any on hand) and enjoy! :)

I can't wait for fresh strawberries! We always go picking, there is hydroponic place right near our house! They are fresh until October, it's a sweet treat! This looks good lady!

I am so digging cashew milk right now. It has such a great consistency. Cashew butter, well find, anything cashew, is my jam too--and I bet I would love it with strawberries!

Strawberries!! This smoothie looks delicious! Even better with cashews and cashew milk which I love! I can't wait for summer when we go pick strawberries, they are so much juicer than the ones in the store. Of course we love those strawberries too!

Mmm this looks yummy ! I've lately been subbing cashew milk in for almond in my smoothies because it's a bit creamier and thicker. Looks good!
