Gluten Free Blueberry Zucchini Waffles


These gluten free blueberry zucchini waffles are the perfect allergy friendly meal to refuel with after a weekend long run. 

Happy, happy Monday! Hope everyone enjoyed a weekend of celebrations and of course, running! 😉 While I am not currently training for a race I did make time to get a run in on Saturday.  It wasn’t very long but it sure was hilly.  The entire time I was running, all I could think about was how amazing some blueberry zucchini waffles would taste- grated zucchini mixed in with some gluten free waffle goodness topped with fresh blueberries….mmmm. 

So obviously the first thing I did as soon as I walked in the door was beelined straight to the kitchen and whipped these up.  Okay, I always head straight to the kitchen to refuel right after a run but I am usually too hungry to take the time to create anything. Thankfully, these bad boys didn’t take too long to make.

With the help of my new spiralizer, I was able to get the zucchini shredded in no time.  The waffle batter itself is a breeze and the only part that took any time was actually waiting for the waffle maker to beep. 

Hot and ready on my plate, they were ready for a photoshoot and after several minutes (more like 20), they were FINALLY ready to be devoured and oh my….were they delicious! 

The combo of blueberries and zucchini is like summer perfection on a plate- especially when they come in waffle form.  Oh and did I mention that I added nutritionally boosted vanilla protein powder to the mix? SO yummy and SO perfect to refuel with.

The nice part is, you could totally make a batch of these ahead of time and freeze them so you don’t have to spend time while your rungry whisking up waffles when you could just be devouring them instead 😉

Gluten Free Blueberry Zucchini Waffles


 

RECIPE

Makes four waffles.

Ingredients: 

  • 1 large zucchini, shredded
  • 1 cup gluten free baking mix
  • 1/3 cup vanilla protein powder (I used Bob’s Red Mill)
  • 1/2 tsp baking powder
  • 1 large egg
  • 2 tbsp olive oil
  • 1 cup unsweetened vanilla almond milk
  • 1 tsp vanilla extract
  • 1 carton fresh blueberries
  • Pure maple syrup, for serving

Directions:

  1. Heat waffle iron to medium (setting #3 on mine). 
  2. Whisk together waffle baking mix, protein powder and baking soda.
  3. Add in egg, olive oil, almond milk and vanilla extract.  Whisk together along with flour mix then fold in zucchini.
  4. Pour into waffle iron close and cook until iron indicates that is done (mine beeps) approximately 5-7 minutes.  
  5. Remove from waffle iron, plate and top with fresh blueberries and maple syrup.  
  6. Eat and enjoy! 😉
