Gluten Free French Toast Sticks with Blueberry Sauce


Happy Foodie Friday friends! I’m not going to waste any time with small talk today, I’m just going to get right into it because I have a confession to make.  Are you ready?? …

….I’ve never had French toast in my life until the other day.  Seriously, I am not joking with you.  For whatever reason, I have never been a huge French toast fan.  Or at least I thought I wasn’t.  To be honest with you, I was always intrigued by it but preferred to order omelets and eggs when out to breakfast over French toast. 

My mom really never made it for us either growing up which probably has a little something to do with it.  Anyway, you might be wondering why I am over here rambling on about French toast and it’s because it’s the recipe I am sharing today.  Yup.  I made French toast without haven ever really eaten it before.  Does that make me a bad person? I don’t know.  But my gluten free version made me realize I’ve been missing out.

Ok, so I actually didn’t make straight up French toast per se, I actually made French toast STICKS and I will tell you why. 

The entire idea was inspired when I received some Canyon Bakehouse hot dog rolls in the mail to try.  Truth is, I don’t eat hot dogs so I started trying to think what else I could make with them.  

As I was reading through the ingredients list I saw that they are naturally sweetened with a hint of agave nectar and a light bulb went off.  Why not make something sweet instead of savory? And the idea for using the hot dog buns for French toast sticks was born!

Seriously though, not to pat myself on my own back or anything but using the hot dog buns was quite genius.  Not only are the Canyon Bakehouse buns already allergy friendly but they are pretty perfectly shaped for cutting into sticks which make this recipe easy to make and ready to enjoy in no time! 

Oh and I nearly failed to mention that unlike a lot of other gluten free breads and buns, these won’t crumble or fall apart so dipping them in that pool of blueberry goodness is no problem at all!

GLUTEN FREE FRENCH TOAST STICKS & BLUEBERRY SAUCE


RECIPE

For French Toast:

  • Canyon Bakehouse Hot Dog Buns 
  • 1/2 cup unsweetened vanilla almond milk (or dairy free milk)
  • 2 eggs
  • 2 tsp agave syrup
  • 1 tsp vanilla extract
  • Cooking spray or oil for pan

 

For Blueberry Sauce:

  • 2 cups fresh or frozen blueberries (no need to thaw)
  • 1/3 cup agave syrup or honey 

Directions: 

  1. Separate hot dog buns then cut each half length wise. 
  2. In a medium bowl whisk together eggs, milk, agave and vanilla extract. 
  3. Dip each piece of the sliced bread into the egg batter so until evenly absorbed.
  4. Heat frying pan to medium and coat with oil or cooking spray. 
  5. Fry coated sticks until golden brown and then flip to the other side.
  6. While sticks are cooking, bring blueberries and agave syrup to boil in a small saucepan.
  7. Once boiling reduce to simmer for about 10 minutes to thicken then remove from heat.
  8. Serve French Toast sticks along with blueberry sauce in a bowl or poured directly on top.
