Parmesan Roasted Acorn Squash to the Rescue!
Happy Holidays and Meatless Monday! I have to be honest with you that I had every intention of sharing a delicious gluten free egg casserole recipe that my mom whipped together for Christmas breakfast yesterday morning BUT I had a little bit of a mishap. Well, it’s more of a big mishap….here’s what happened.
Twas the morning of Christmas and breakfast was to be served
When Annmarie piped “WAIT let me snap some pictures first!”
She set the scene, placed the GF egg casserole on the table just so
And grabbed her camera only to watch it go go go
FLYING from her hands and on to the friggen floor.
Okay, the last part doesn’t rhyme but that’s not the point. The point is that I totally smashed the lens on my camera. Of course I was CRUSHED and may have even cried but felt a bit better after I Amazon Primed myself a new lens. It didn’t really solve the immediate problem but did take the sting away a little.
SO anyway, since I have nothing new to share for today, I figured I’d share the dish my mother made last Christmas again. It was delicious at the time and had quite a positive response from everyone then.
Just as I had planned on sharing the GF egg casserole dish (ya know by snapping a picture of all HER hard work and effort) I also did the same last Christmas right as this Parmesan Roasted Acorn Squash popped out of the oven.
Not only is it simple to make but it’s also seriously delicious. In fact, I was a little disappointed to find that she didn’t put it on our menu again this year.
