Gluten Free Salted Caramel Apple Toast


They say simple is best.  In fact, I say simple is best all the time…not to mention easiest.  When simple it’s quick AND healthy then you have a winning combination especially when it comes to food.

In my post on Friday about pre-workout recipes, I actually even made a point to say that I like to keep things simple.  I normally reach for a piece of toast, a Medjool date or two and cup of coffee before my run or workout.  So whatever possessed me to try to whip up an elaborate recipe using Medjool dates is BEYOND me.  

While I tend to get creative with my recipes, I usually keep the ingredient list and process pretty short and sweet (no pun intended).  However,I felt ambitious this past week and tried something out of my comfort zone in the kitchen and failed…pretty hard.

After suffering my second defeat, I was slapped in the face with my own advice…keep it simple. DUH.  I always opted for plain toasted with Bard Valley Natural Delights Medjool Dates (which, by the way is still pretty awesome) but I decided to kick it up at a notch and make caramel spread using the Medjool dates.

Believe it or not, Medjool dates taste A LOT like caramel when they’re pureed.  Add in some salt, spread it on some  gluten free toast and top it with sliced apples and you’ve got yourself a piece of salted caramel apple heaven for breakfast.  Simple, easy and seriously delicious.

Not only does it taste amazing, it’s also pretty nutritious too.  Not only are Medjool dates low on the glycemic index (meaning no mid-morning sugar crash), they’re also high in fiber and potassium.  In fact, they have 50% MORE potassium than a banana which makes them the perfect way to fuel and recover from your workout.

RECIPE

Ingredients: 

  • Pitted Medjool Dates, pureed*
  • sea salt, to taste 
  • 1 apple, sliced 
  • 2 pieces of gluten free toast (I used Canyon Bakehouse)
  • drizzle of blackstrap molasses (optional)

 

Directions: 

  1. Pulse Medjool dates along in a food processor along with hot water (start with ¼ cup).  Add water in small increments until a creamy paste forms. Then add in salt and pulse again to mix. 
  2. Spread “caramel” on toast then top with apples and drizzle with molasses, if desired.
