Gluten Free Sweet Potato Sliders for Super Bowl


Guys.  I had a brand new recipe all ready for you, photographed and everything then I got hit with the stomach bug HARD on Wednesday night, was mostly immobile on Thursday and am barely functioning today.

As much as I wanted to muster up the energy to put together a new recipe post, I just couldn’t.  SO instead I am re-sharing with you one of my FAVORITE recipes that was also recently shard by Redbook Magazine online, my Paleo Sweet Potato Sliders!

Paleo Sweet Potato Sliders {Gluten Free, Dinner, Football Snacks, Football Food, Tailgating Party, Sweet Potato Buns, Foodie Friday}

Just as Redbook described, they are a “healthy hamburg sandwich anyone can enjoy”.  Vegetarian or not a red meat fan? Try making my Mushroom & Black Bean “Meatballs” into burger patties instead and stuff them in between the slices.  A reader recently told me she did so and they turned out fantastic!
