Super Easy Grain Free Walnut Cashew Snowball Cookies


When I was little my Mom made so many different kinds of holiday cookies I can’t even remember them all.  The ones that stick out in my mind are gingersnaps (which inspired my Paleo Gingerbread Muffins) and Snowballs or Butterballs or whatever they are really called…I honestly have no idea.  

All I know is that they are a ball of butter, sugar and nuts and they make a HUGE mess.  Or at least I used to make a huge mess when “helping” to make them…which is really part of the fun when you’re a kid.  Messes are always more fun when you’re a kid because mom does the clean up.  

In an effort to carry on the tradition of making cookies (and messes), my four year old assisted in the “dusting” of the sugar – which is really the only indulgent part of this “healthified” recipe.

 

With a few simple healthy swaps, these easy-to-make grain free snowball cookies will quickly become your new favorite holiday treat! [gluten free, dairy free, vegan friendly, allergy friendly]

Traditionally (according to my Mother’s recipe), these are made with butter, sugar, salt, vanilla extract, flour and chopped nuts and confectioner’s sugar.  Instead of butter I used cashew butter, instead of sugar I used honey and instead of regular flour I used almond flour.  

Seriously, all very easy to swap.  I did leave the confectioner’s sugar since I only used a dusting and wanted to keep to the traditional nature of the cookie. Plus it’s the holidays and you should totally #treatyoself.

WALNUT & CASHEW SNOWBALL COOKIES

{GLUTEN FREE}


 

Ingredients:

  • 1 cup cashew butter
  • 1/4 cup honey (can be subbed for maple syrup, if vegan)
  • 1 cup almond flour 
  • 1 tsp vanilla extract
  • 1 pinch salt 
  • 1/2 cup chopped walnuts 
  • confectioner’s sugar for rolling

Directions:

1. Preheat oven to 350 degrees.
2. Combine everything except confectioner’s sugar into a bowl and mold into balls.
3. Place on parchment lined baking sheet and bake for approximately 20 minutes then remove from the oven.
4. When cooled just enough, roll in confectioner’s sugar.
5. Bite into one and enjoy! 😀
