Grain Free Walnut Cashew Snowball Cookies


When I was little my Mom made so many different kinds of holiday cookies I can’t even remember them all except Snowballs or Butterballs or whatever they are really called, I honestly have no idea.   All I know is that they are a ball of butter, sugar and nuts and they make a HUGE mess.  Or at least I used to make a huge mess when “helping” to make them.  

Anyway, I haven’t really had them in a while but they happen to be my husband’s FAVORITE holiday cookie so I decided to whip up a healthier version for him to enjoy. 

Traditionally (according to my Mother’s recipe), these are made with butter, sugar, salt, vanilla extract, flour and chopped nuts and confectioner’s sugar.  Instead of butter I used cashew butter, instead of sugar I used honey and instead of regular flour I used almond flour.  Seriously, all very easy to swap.  I did leave the confectioner’s sugar since I only used a dusting and wanted to keep to the traditional nature of the cookie. 

Gluten Free and Dairy Free (Vegan Option) Snowball/ Butterball Cookie Recipe

WALNUT & CASHEW SNOWBALL COOKIES

{GLUTEN FREE}


 

Ingredients:

  • 1 cup cashew butter
  • 1/4 cup honey (can be subbed for maple syrup, if vegan)
  • 1 cup almond flour 
  • 1 tsp vanilla extract
  • 1 pinch salt 
  • 1/2 cup chopped walnuts 
  • confectioner’s sugar for rolling

 

Directions:

1. Preheat oven to 350 degrees.
2. Combine everything except confectioner’s sugar into a bowl and mold into balls.
3. Place on parchment lined baking sheet and bake for approximately 20 minutes then remove from the oven.
4. When cooled just enough, roll in confectioner’s sugar.
5. Bite into one and enjoy! 😀
