Grilled Shrimp, Watermelon & Arugula Salad

Happy Foodie Friday once again! It’s been another busy week and I have to say that I am incredibly excited that it’s coming to an end.  Not just because it’s the weekend but also because I leave to go to the Reebok Headquarters on Sunday to check out their facility and mingle with some other Ragnar Relay Ambassadors for a few days. 

I know that it is going to be all sorts of epic and I cannot wait.  This weekend is actually jam packed with events including a long run on Saturday morning with my crew, a 5k race on Saturday night, several children’s birthday parties and getting my bags packed to fly to Boston.  

All those busy things doesn’t leave much time for making elaborate meals but I am really not the type to settle for boring either.  In fact, during the summertime I like to keep it simple by taking it to the grill and adding flavor with spices and fresh seasonal produce.  One of my ALL TIME FAVS is this Grilled Shrimp with Watermelon & Arugula Salad.  This recipe originally made an appearance on the blog about 2 years ago and since today’s Foodie Friday theme is “Recipe Adaptations” I thought I would share one of my favorites from back in the day! 

Grilled Shrimp, Watermelon & Arugula Summer Salad {gluten free}

Just feast your eyes on that for a quick second.  Doesn’t it look drool worthy? (Pics were shot with my iPhone back in the day so use your imaginations 😉 😉 )

This dish was inspired by an appetizer that I had at a local restaurant called Rainbow Shores when my husband and I went out to dinner a while back.  It was pretty much just watermelon, arugula and balsamic but the combination of flavors tasted decadent and even a bit indulgent. I was actually really impressed with the entire meal there and it was totally unexpected considering the restaurant is located in the middle of no where off a literal beaten path.

Honestly, if you’re local and haven’t been here for dinner yet; you’re missing out.  Rainbow Shores is like this little hidden treasure of deliciousness with an extraordinary view of the majestic lake we live on and all take for granted. Point being, if you haven’t been to Rainbow Shores to dine, do it.

Anyway, this dish is rather simple and there isn’t much to explain so I will just let the pictures do the talking for me. 

Just take this perfectly grilled shrimp….

Grilled Shrimp, Watermelon & Arugula Summer Salad {gluten free}

Grilled Shrimp, Watermelon & Arugula Summer Salad {gluten free}




  • 13-15 count raw shrimp, deveined & peeled
  • Sea salt, pepper, & garlic powder
  • 1 bunch of arugula
  • 1/4 watermelon, sliced in triangles
  • Balsamic glaze



  1. Season shrimp with salt, pepper and garlic to liking.
  2. Secured onto raft skewers and grill until no longer gray in color.
  3. Remove from grill and place aside to plate.
  4. Place arugula on a plate and carefully place watermelon on top.
  5. Position shrimp on top of the watermelon.
  6. Drizzle with balsamic glaze.
  7. Enjoy! :)
