Honey Crystal Candied Ginger Recipe {Paleo}

Howdie foodie friends! I cannot believe that it is already Friday again which means that yesterday I was getting busy in the kitchen preparing a recipe to share for today! 

Our theme is “Pinterest curiosities” and while it sounds like it would be simple to come up with something given the vast array of deliciousness I have pinned, I always end up struggling with this theme a bit.  

Like I said, it’s not that there isn’t something I want to make, it’s just that there is so much that I don’t know where to start.  So after thinking long and hard, I decided to make NONE of the recipes I had pinned and rather find a guideline to use to make something I’ve been curious about trying at home.  

What might that be, you ask? Candied ginger! 

Honey-Candied Ginger made with Nektar Naturals Honey Crystals {Paleo, Gluten Fee}

I know.  Seems like an odd thing to be curious about making at home especially for someone who doesn’t really like candy but lately I have made the habit of having a small piece of candied ginger as an after dinner palate cleanser and digestive aid.  I also like to enjoy dark chocolate but I have found that candied ginger agrees with my stomach more and helps to settle it better.

So, for the last few months I have been keeping a stash of it in the cupboard and religiously having a small piece after dinner each night.  The best part is that I don’t even need to hide to enjoy it since it’s “too spicy” for the kids 😉  

The only part I don’t love about the candied ginger is the fact that it is loaded with a little more sugar than I’d care for but thankfully the substitution solution is healthy and a lot simpler than you’d think.  

Enter: Nektar Naturals Honey Crystals.  As soon as the idea to make candied ginger, it hit me like a ton of bricks that this would be the PERFECT way to make it healthier using Nektar Naturals Honey Crystals! Not only is honey healthier but the honey crystals are WAY easier to measure and WAY less messy! Whoop!

Even if you don’t want to eat straight up, there are other ways you can enjoy this healthier honey crystal candied ginger like in tea or coffee and even sweeten treats when baking.







  1. Peel ginger root and slice into 1/8 inch pieces using mandoline slicer and place into a saucepan along with water. 
  2. Bring to a boil over high heat then reduce to simmer and cover and cook for approximately 35 minutes. 
  3. Drain all but 1/3 cup from the pot and add in honey crystals.  Set over medium to high heat and bring to a boil stirring constantly until most of the liquid has evaporated and it looks dry- approximately 20 mins. 
  4. Transfer ginger to a cooling rack.  Once cool, store in air tight container for up to 2 weeks.
