Foodie Friday: Honey & Curry Roasted Harvest Veggies

Today’s theme is “veggie surplus” with the goal of using up any extra veggies you might have taking real estate up in your fridge.  To be honest, I didn’t exactly have a lot of extra veggies hanging out (except a sweet potato) but I wanted to share this recipe with you today for several reasons.  

Actually, this isn’t the first time that I am sharing this recipe.  I actually made it and posted it about a year ago but with all the updates and revisions that my blog has gone through, the pictures got deleted (they needed to be updated anyway) plus I wanted to change the recipe up a bit!

You see, before when I made this recipe I used just regular ol’ sticky honey.  Not that there is anything wrong with raw honey ….except that it’s sticky.  This time, swapped the sticky mess out for some Nektar Naturals Honey Crystals which eliminated the sticky mess and made whipping these roasted veggies together just that much easier! 

Seriously, other than chopping up some veggies, you just have to mix in the coconut oil along with the spices and some sprinkles of honey crystals and you’re good to go….the hardest part is waiting for the 40 mins or so while they roast! :)

Honey and Curry Roasted Harvest Veggies (Roasted Vegetables, Nektar Naturals Honey Crystals, Fall Veggie, Dinner Recipe, Gluten Free, Vegetarian, Thanksgiving side dish}

 

HONEY & CURRY ROASTED HARVEST VEGETABLES


 RECIPE 

Ingredients:

  • 3 or 4 large carrots, cut length wise then halved
  • 12 oz Brussels sprouts, halved
  • 1 sweet potato, diced
  • 1/2 butternut squash, diced
  • 1 head of cauliflower, chopped into florets
  • 1 onion, sliced into wedges
  • 1/2 cup coconut oil, melted
  • Sea salt & fresh ground pepper, to taste
  • 1 tbsp, curry powder
  • 1 tbsp, cumin
  • 2 tsp, onion powder 
  • 2 tsp, garlic powder
  • 2 tsp, turmeric- 2 teaspoons
  •  1/2 tsp, ground ginger 
  • 2-3 tbsp Nektar Naturals Honey Crystals

 

Directions: 

  1. Preheat oven to 400 degrees.
  2. Chop, slice, dice and prepare veggies.
  3. In a large bowl, mix veggies with seasonings and coconut oil.
  4. Spread into a single layer on a baking pan.
  5. Cook for approximately 30-35 minutes.
  6. Remove, serve & enjoy! :)

Oh my gosh- I love this idea. I was really curious when I saw the first picture on this post as to what you were sprinkling on the veggies and I didn't even know they sold honey in crystal form. I really like how much easier it would be to measure out. I can't wait to try this recipe.
