Honey Lime Chili Popcorn Recipe {Dairy Free, Gluten Free}


Every Sunday night, mostly without fail, my family and I make up a batch of homemade popcorn and settle down together to watch whatever show or movie of our choice.  

Lately, this has been happening on more than just Sundays.  It could be that we like to spend time together or it could be that we really, really like popcorn….and as much as I love my family, I tend to think it’s the later. 

There is something about it that is comforting regardless of what time of year it is.  During the winter, the freshly popped kernels warm us up and during the summer, it feels like the perfect evening treat.

Popcorn also happens to be super versatile.  The fact that we make it at home allows us to flavor it any way that we choose.  We’ve played around with sweet variations like  Chocolate Honey Salted Popcorn and Salted Peanutbutter Popcorn and savory versions during football season like Sweet and Spicy Buffalo Wing Popcorn

Lately, as the weather has slowly begun to get warmer, I’ve been whipping up Honey Lime Chili Popcorn.

With just 3 simple ingredients and a bit of sea salt you have the perfect summer popcorn.  

The smokiness of the chili powder combined with the sweetness of Nektar Naturals Honey Crystals and refreshing flavors of lime zest can take you from a simple evening on the couch to what feels like you’re snacking in paradise….especially if it’s paired with a homemade margarita in hand! šŸ˜› 

The best part is that the honey crystals give a hint of added sweetness without the mess of traditional honey since they’re in crystal form….you shake it on just as you would salt!

Oh and did I mention it’s popped using coconut oil…reminds me of that song…how does it go? Put the lime in the coconut and shake it allll up…..yeah, it kinda tastes like how that song makes you feel.

Honey Lime Chili Popcorn {Butter Free, Gluten Free}


 RECIPE 

Ingredients: 

  • 2 tbsp coconut oil (melted)
  • 1/2 cup popcorn kernels
  • 1 tbsp chili powder 
  • 1.5 tbsp Nektar Naturals Honey Crystals
  • Zest of one lime

 

Directions: 

  1. Heat oil in large pan. 
  2. Add kernels then cook, cover and shake until all kernels are popped (about 8 minutes). 
  3. Remove from heat. 
  4. Mix spices and zest together then toss along with popcorn until coated. 
  5. Serve and enjoy :)
