Lamb Gyro Salad with Dairy Free Tzatziki Sauce {Gluten Free}


Recently I have been enjoying a lot of burgers sans buns when ordering out.  I’m not talking like fast food or anything but since I’ve been traveling a lot lately, ordering a burger off the menu without a bun and a side of extra pickles has kinda been my thing.  

It has also left me craving lamb like woah which is something I don’t get to enjoy normally even though I grew up eating it because my husband ~hates~ it.  

Anyway, those cravings inspired me to make lamb meatballs in a lettuce pocket with my dairy free tzatziki sauce except when I went to the store to buy ground lamb they didn’t have any.   So I asked for shaved lamb and they didn’t have any of that either.

Needless to say, I was annoyed but I live in a really rural area and it’s pretty typical for my local grocery stores not to have what I am looking for (like ever) so I’ve become accustomed to problem solving on the fly. What they did have was lamb loin chops so I made (begged) the butcher to shave me some loin off the bone and while it wasn’t what I intended to use, I was NOT disappointed.

While this recipe intended on being more burger like and turned out more salad like, the forced changed of plans made took lamb to a whole new level for me.  

I prepared the meat by massaging a mix of middle eastern spices into it and lightly pan searing each piece.  I even had my mom help me out which made it even more special since she is where I get my Lebanese heritage and love of lamb from.

The rest of the salad was fairly simple to prepare with leafy green lettuce, thinly sliced cucumbers (using a spiralizer), cherry tomatoes, fresh mint and a hefty drizzle of the dairy free tzatziki.

Lamb Gyro Salad with Dairy Free Tzatziki Sauce


RECIPE

Ingredients: 

  • 3/4 lb fresh shaved lamb loin off the bone
  • 1/4 tsp ground cinnamon 
  • 1/4 tsp ground turmeric 
  • 1/4 tsp ground cumin 
  • pinch of sea salt
  • 1 tsbp olive oil
  • leafy green lettuce, hand torn
  • English cucumber, thinly sliced or spiralized 
  • cherry tomatoes, halved 
  • fresh mint, shredded
  • Dairy Free Tzatziki Sauce (recipe found here)

Directions: 

  1. In a medium bowl, massage seasonings into meat until evenly coated.  Add more to taste, if desired.
  2. Heat oil in medium size skillet or pan then pan sear each piece for approximately 1-2 minutes each side then remove using fork and place onto plate. 
  3. Gently blot off excess grease, if desired. 
  4. Assemble salad by plating leafy greens and topping with cucumbers, 1/4 lb of lamb, tomatoes, mint and drizzling tzatzki sauce on top. 

Makes enough for approximately 3 servings/salads.
