Light and Healthy Sautéed Broccolini & Mushrooms


Happy Meatless Monday! How was everyone’s Valentine’s Day? Did you indulge in champagne, chocolate and all the sweet treats? Ready to get back in the groove of routine, exercise and eating healthy? Good because not only do I have a recipe to share but also a fitness challenge as well.

Ok, not onto this super light and healthy recipe…

I think as food bloggers we often spend a lot of time trying to come up with something different and creative- it’s fun to try a new combination of ingredients and play around with recipes that we normally don’t eat during the week.  

However, there is something to be said about what we DO eat during the week that we don’t always share.  I honestly never think to share some of the easiest entrees and side dishes that are created in my kitchen because they might come off as too simple.  But isn’t that what we are all looking for? Something simple, quick AND healthy that we can whip up without too much effort. 

So, I present to you one of my favorite any day of the week dishes- perfect as a side or even for lunch!

Broccolini, also known as Chinese Broccoli, is similar to broccoli but with smaller florets and longer, thinner stalks.  It is a hybrid vegetable of broccoli and gai lan that has some notes of sweetness with a little kick.

While it seems a little exotic by name, cooking it really isn’t all that complicated and can easily be prepared by roasting, stir frying, steaming, boiling or sautéing.  

Truth be told, it wasn’t me but my husband who introduced me to this green vegetable and his favorite way to prepare it is with a quick sauté along with onions for flavor and mushrooms for some extra heartiness.

The beauty of this dish is that it doesn’t take any time at all.  Just simply chop the veggies, heat the pan and once they’ve been sautéed, it’s ready to serve!

Sautéed Broccolini & Mushrooms


RECIPE

Ingredients: 

  • 2 tbsp olive oil
  • sea salt, to taste
  • 1 onion, chopped
  • 1 8oz carton baby bella mushrooms
  • 2 heads broccolini, rinsed in cold water then julienned 
  • garlic powder, to taste
  • fresh ground pepper, to taste 

 

Directions: 

  1. Heat olive oil in large sauté pan, season with salt then add in onions and cook until no longer opaque. 
  2. Add in mushrooms and cook until soft. 
  3. Add in broccolini, season with garlic and pepper then sauté on high for approximately 5 minutes or until slightly tender and bright green. 
  4. Remove from heat, plate and serve! :)

I eat a lot of mushroom! Several times a week I cook/saute mushrooms, onions, kale & spinach together. Now I am going to have to get me some broccolini this week! :) Have a great day!

    Oh man, really? That is frustrating. Our grocery store doesn't carry a lot but it does carry broccolini for some reason.

Why do I always pass over the broccolini at the grocery store. This recipe sounds perfect for a easy dinner idea! Loving the mushrooms (Dave hates them so this would be all for me!!)

I think I had broccolini in my farm share last year...it's good! I love simple recipes, they have a higher likelihood that I will try them out! Your food photos always make me hungry :)

This looks amazing! I need to find some broccolini. We eat lots of broccoli but I find after a while it's hard to chew because it's so bulky!
