Light and Healthy Sautéed Broccolini & Mushrooms


Happy Halloween and Meatless Monday! With all the temptation of treats and candy surrounding this spooky holiday, it’s probably safe to say that you might end up indulging a little more than you’d like.  

To be honest, I had a super yummy/healthy S’mores Smoothie to share with you today but I am having technical issues with my website.  So instead, I thought it would be smart to share this easy-to-make dinner side dish.  

It’s super healthy and filling and while it’s not the chocolate, graham cracker and marshmallow deliciousness I’d planned to post, it’s still drool-worthy, just of the savory variety.  It also happens to be a weeknight go-to at my house and requires little to no time to make!

I think as food bloggers we often spend a lot of time trying to come up with something different and creative- it’s fun to try a new combination of ingredients and play around with recipes that we normally don’t eat during the week.  

However, there is something to be said about what we DO eat during the week that we don’t always share.  I honestly never think to share some of the easiest entrees and side dishes that are created in my kitchen because they might come off as too simple.  But isn’t that what we are all looking for? Something simple, quick AND healthy that we can whip up without too much effort. 

So, I present to you one of my favorite any day of the week dishes- perfect as a side or even for lunch!

Broccolini, also known as Chinese Broccoli, is similar to broccoli but with smaller florets and longer, thinner stalks.  It is a hybrid vegetable of broccoli and gai lan that has some notes of sweetness with a little kick.

While it seems a little exotic by name, cooking it really isn’t all that complicated and can easily be prepared by roasting, stir frying, steaming, boiling or sautéing.  

Truth be told, it wasn’t me but my husband who introduced me to this green vegetable and his favorite way to prepare it is with a quick sauté along with onions for flavor and mushrooms for some extra heartiness.

The beauty of this dish is that it doesn’t take any time at all.  Just simply chop the veggies, heat the pan and once they’ve been sautéed, it’s ready to serve!

Sautéed Broccolini & Mushrooms


RECIPE

Ingredients: 

  • 2 tbsp olive oil
  • sea salt, to taste
  • 1 onion, chopped
  • 1 8oz carton baby bella mushrooms
  • 2 heads broccolini, rinsed in cold water then julienned 
  • garlic powder, to taste
  • fresh ground pepper, to taste 

 

Directions: 

  1. Heat olive oil in large sauté pan, season with salt then add in onions and cook until no longer opaque. 
  2. Add in mushrooms and cook until soft. 
  3. Add in broccolini, season with garlic and pepper then sauté on high for approximately 5 minutes or until slightly tender and bright green. 
  4. Remove from heat, plate and serve! :)
